Hi gals,

Thanks for cheering me on, makes me all happy inside.

Well, I'm not going to the hockey game. We ended up with a batch of beef jerky in the oven and I have to jerkysit. Its ok, I have a nice quiet evening home with me and the pups. DD is off to a progressive dinner and hubby went to the game. He needs man time anyway. I actually like staying home alone.

I made the mock potato casserole. I could still taste that it was cauliflower but it was really good regardless. I think its the cream cheese that makes it taste so good. I left out the bacon. I thought it would make a bigger batch than it did.

I made quiche this morning also. I love eating this way!

Does anyone remember that Laverne and Shirley where a gal ate the bacon diet? It was only bacon at all meals. I now understand that diet *LOL* then again she also washed her hair with Ajax. Her hair, I must say, was squeaky clean.

Interesting salad, Click, I'll have to try that sometime.

Have a wonderful Saturday night all.

Isn't it nice...being home alone!!!! The time goes by so quickly...and, then, they are all back!!!!

Quiche sounds so good!!! Did you like the mock potato casserole enough to make it again? If you make the salad...leave out the vinegar...mixed it up with something else!!! This salad is one of my favorites!!!

We're having a snow storm tonight!! Other than that...it's the same old thing...and nothing is new!!!!

Hope that everyone is enjoying themselves!!!

Oh I love snow when I dont have to drive in it. Its so pretty. When I have to drive in it, I freak out. I've done well so far. My first car was a monte carlo with rear wheel drive, that thing was a sled, no traction even with studs. My malibu has done real well so far.

Go out and throw some snowballs around for me, it will make you feel better.

Yes, I think I will make that mock potatoes again. Its quite good. And I've always hated cauliflower, so it says alot.

I am really enjoying my time alone. The tv isnt on some boring discovery show, I have the stereo on playing Christmas music, the tree is lit up and the candles are burning. Ahhhh.

Oh, Pear, I would love it, thank you. You will have to explain how to use the coupon, though.

I have been putting it off since the special that my daughter saw is over. I could justify buying it, now.

I am sitting her sooo very full, it sure doesn't take much. I had one of those little bacon wrapped carved steaks from WalMart with spinach and sautéed mushrooms. I brought up some Romano cheese to snack on later. I just can't seem to eat enough calories.

B: 1 oz. Romano Cheese & over a cup of Jicama
L: 1 egg omelet with fresh Green pepper and salsa
D: Bacon wrapped steak, sautéed mushrooms and 1 C Del Monte spinach
S: Beef Jerky & pork rinds

That brings me up to 915 calories with 22 net carbs for the day and I am too stuffed to eat more. I don't want to sabotage myself because I think I am not eating enough.

Pear, I made these before I read your comment.

I had cherry SF jello so decided to make Cherry Mash balls like the candy I love, rolling them in crushed peanuts. Nick helped me and he also loved them. Now the problem is to stay out of them.

I used liquid sweet-n-low & Stevia.

Thanks a bunch for a nice treat, you have really been coming through for me.

Good morning...Tooter, Pear, Jeanran, Backspace, and Ailuros!!!!

I wonder where every one else has been? I hope that all are still eating healthy!!!! (Meaning...I hope that everyone missing didn't get sucked into a batch of Christmas cookies, and are too ashamed to come here!!!! That's what we're here for...to share in the good, and bad, times!!! ) This time of the year is difficult, but with the support that we offer one another...I know that we can do it!!!! I plan on staying "clean" from carbs this holiday season!!!!! If I stray....I would have to go through all of this again....and I REALLY did not enjoy the first week!!! (But...I will miss the Christmas cookies, candies, carbie appetizers, etc... )

You'll all be glad to know that I'm missing something!!!!! Since I've been carb free....my a$$ has been too!!!! Like a fine-tuned automobile, I must have burned the carbon out of the system!!!! Really....no more barking spiders!?!?! I kinda miss the little fellows!!!! They were my source of entertainment!!! (When I ate carbs....I must have ripped-a$$ every 5 minutes....no exageration!!!! Now, maybe, 1 time a day!!!)

You Guys!!!! You should see it outside!!!! Still snowing!!! What makes it worse is the wind!!! It's really getting windy...and the drifts...well, they suck!!!! I wish the wind would stop long enough for me to shovel!!! I do not mind the cool air, but can not tolerate windy, cold, and snowy days!!!! The cold wind takes my breath away...and I do not mean that in a good way!!!

Morning all. It's snow/sleet/freezing rain here right now. Not going out in this mess today.

Hope everyone is doing well in their weightloss journey. Seems like maybe we lost a few people? Hopefully they are lurking and losing.

Well, I think I'm going to have to start using Fit-Day again. Got down to 146.5 and felt really full of myself apparently, because I am now back up to 148.5. The minute I start losing, I think I can handle more food. I'm going to have to be strict with my myself and write down every morsel I put in my mouth for a while to see what I'm actually eating that is causing me to put back the few lbs I was so proud of losing.

Sunday - so far:
3 fried eggs with 1 tblsp butter
coffee w/cream

Good Morning, all!!

Jean, your grandson is very handsome!! I asked hubby and we are about 60 to 70 miles away from Bucknell. I have never been there, but alot of my kids friends have gone to school there.

Lost and Found, I have been to Prudue a couple of times (for Penn State Football Games). Lafayette is a beautiful town and the people always seemed very friendly and nice. Go Boilermakers!!!


I'm trying to catch up on the posts here.

I totally agree about trying to just "Maintain" during the holiday season. That is a very realistic goal. If you also happen to lose, well...that's icing on the cake.

I think the "Key" would be not to go into the "All or Nothing" mentality. Meaning, don't think it's ok to totally go off plan and eat everything that isn't tied down. Try to have some "limits" with your choices and really think about if it's "worth it" or not. If you make a "Poor Choice", get right back on with the next thing you eat. Instead of "All or nothing" Where you are either ON or OFF plan...Try to make "better choices" and still have some limits.

Remember, if you make a "poor choice" it could effect you with cravings. Try and have the next food you eat, counteract that. As I said, eating more fat seems to help me with this.

Also, remember our idea about eating the coconut Oil bark "before" you go to a holiday event, to help control your hunger. I think it will help with Over indulging.

We do seem to be missing a few people, but this is the holiday season and I'm sure that they are very busy with work and family. We will be waiting on them when they get back.

We have had a Winter Storm here with sleet, freezing rain and snow. My poor dogs are ice skating trying to go Potty outside! lol

I was also thinking, Now would be a good time to make low carb treats that you could have instead of the higher carb ones.

Tooter's Mini pecan pies

2 Tablespoons butter
1 1/4 cup of almond flour
4 oz (half of an 8 oz package) of cream cheese


Preheat oven to 325 degrees. Soften cheese and butter and blend well. Stir in flour. Chill 1 hour. Shape into twenty-four 1-inch balls. Place in ungreased small muffin tins. Press down to form crust.

Filling

1 egg
1/4 cup of Splenda
1/2 cup of Diabetisweet
1 tablespoon butter
1 teaspoon vanilla
1 teaspoon Black Strap Molasses
Dash of salt
3/4 cup of chopped pecans

Beat egg, sweetner, butter, vanilla, Molasses and salt until smooth. Divide half the nuts among pastry cups. Add egg mixture. Top with remaining nuts.
Bake for 25 minutes or until Golden brown.

Loosen the mini pie's sides with a teaspoon, then scoop them out and set them aside to cool.

Enjoy!




Peanut Butter Fudge


1 stick of UN-salted butter
1/2 cup of peanut butter
2 oz. of cream cheese
1 cup of granular Splenda
2 scoops of vanilla flavored Protein Designer Whey Powder


How To Prepare:

Melt the butter and peanut butter in the microwave on high for 2 minutes. Stir. Microwave for another 1 min. Remove and stir in the cream cheese until completely dissolved. Stir in the Splenda and then stir in the Designer Whey Powder. Grease a 6 1/2 inch square container (I used a 1 quart corning ware cassarole dish. Line with wax paper. Pour in the dish. Put in the refrigerater until cool. To speed up this process place in the freezer until cool. Cut it into 20 - 1 inch square pieces.




Cream Cheese Muffins


2 8oz. pks. philadelphia cream cheese
1/2 cup Splenda
2 eggs
1/2 tsp. vanilla

Soften cream cheese about 40 seconds in microwave. Add other ingredients. Beat with mixer till smooth. Pour into 12 muffin pans lined with the papers. Bake at 350 for 20 min.

Let them cool and the put the in the Fridge for a few hours before you eat them. The flavor is much better (and like cheesecake) if you eat them cold.

Low Carb Flourless Peanut Butter Cookies

These are super quick and easy to make but tend to be crumbly so eat them over a plate for sure.

1 cup Natural Peanut Butter
1 egg beaten
1 cup Splenda

Mix the above all together and make into 12 balls. Put the balls onto a cookie sheet and then smush them down with a fork to make traditional PB cookies. Bake at 325 for about 10 minutes.



Chocolate Chip Cookies


Preheat oven to 375°F.

12 ounces Sugar free chocolate chips (or Sugar Free chocolate bars chopped up)
1 cup (2 sticks) Butter, softened
1.5 Cups Splenda
1.5 tsp Blackstrap or Dark Molasses (i used dark)
2 eggs
1 Cup almond flour (aprox 2/3 C raw almonds ground fine in food processor (I use a coffee grinder) yields about 1 Cup almond flour)
1 Cup vanilla whey protein powder
1/4 Cup Oat bran
1tsp baking soda
1tsp salt
1 Cup chopped walnuts or pecans

Using an electric mixer, beat butter, Splenda, and molasses until creamy and well blended. Add eggs, one at a time, and beat well after each addition. In a separate bowl, stir together ground almonds, vanilla whey protein powder, oat bran, baking soda and salt. Add this mixture, about 1/2 cup at a time, to butter/Splenda mixture, beating well after each addition, until it is all beaten in. Stir in nuts and chopped chocolate bars or chips. Drop by rounded tablespoons onto cookie sheets sprayed with non stick spray. These will not spread and flatten as much as standard chocolate chip cookies, so if you want them flat, you'll have to flatten them a bit.

Bake for 10 minutes, or until golden.

*note* I found that the cookies had just a little too much salt in them. They were still wonderful. Next time I make them I will use 1/2 teaspoon instead of the full teaspoon called for in the recipe.

3 Minute Chocolate Cake

Ingredients -
1/4C Almond flour
1 T Cocoa Powder
1/4 t Baking Powder
4-5 packets of Splenda

2 T Melted Butter
1 T Water, or SF syrup
1 Egg

Total Carb count (ECC) for the whole recipe with 5 packets Splenda - 8.6

In a 2 Cup Pyrex measuring cup,blend all dry ingredients. Add water, melted butter and egg...mix throughly. Cover with plastic wrap (To vent, cut small slit in center of plastic wrap.) Microwave on high for about 1 minute 10 secs (I microwaved for almost 2 minutes...you need to adjust as you think is right). When this comes out of the microwave, it looks a bit wet but drys as it cools.

Cool a bit, eat warm with whipped cream or cool completely to ice cake. This could serve at least 2 people, maybe three. Cake without icing is 8.6 carbs. Folks have frosted it with cream cheese, twist, pudding, whipped cream, LC ice cream, etc.

Hi there...backspace!!! Now we are getting the Lake effect crap!!!

Don't worry...those few pounds will disappear quick!!!! Just post every single thing that you eat here....someone will tell you if it's wrong!!! Plus, I found that listing everything here....makes me more aware of what goes in my mouth!!!

The Movie was good. I had seen it before awhile ago. It's both funny, sad and pretty deep, actually. It's an Adam Sandler movie, and normally I don't think he's that funny, but either he is starting grow on me, or he has matured with his movies. It's a good Movie.

My favorite? Right now I really like the peanut butter fudge. My all time favorite is the mini pecan pies, that's why I don't make them very often. I will make them for Christmas, though.
