I think that I know what it is...unless, what I'm thinking of is something else!!! Once, I saw by a deli...some real thinly sliced, pink smoked fish. Maybe that was Lox, but I thought that the stuff that I saw had some Italian name. None the less, I love fish...and I'm sure that it is very good!!!

Good Morning!! I just made a pot of Fresh coffee. Would anyone like a cup with French Vanilla, Sugar free Creamer?

*taking a sip of coffee* Ahhhhhhhh That's just what I needed this morning on a Snowy day in the mountains of PA.

Well, this weekend I was baking alot. The family is doing "Lower in carbs" and I am doing "Low carb" (More Natural). I baked Dana Carpender's Oatmeal cookie recipe. Not bad. Alot of fat in it (both butter and coconut Oil) so they fill you up fast. Of coarse I had to "taste test" and ate more then just a taste, but I was surprised my weight wasn't up this morning. In fact, it was down half a pound. I have no clue why. It's not something that I am going to do all the time.

Anyways, so I made them those cookies and then took a few and made them Ice cream sandwiches out of 2 cookies and low carb vanilla ice cream.

They had dreamfield pasta with meat sauce, green peppers, onions and Hot Italian sauasage. (Dreamfield is a pasta that is low carb and tastes like the regular pasta, it just doesn't effect your insulin levels like regular pasta does).
They also had a tossed salad with Greek dressing. I had Salmon seared in Coconut oil and a Salad. I actually had to force it after all that fat in the Oatmeal cookies.

This morning I had 3 eggs over medium cooked in butter, then mashed with even more butter and Salt N Pepper.

Lunch will be a hamburger with Mayo wrapped in Romaine lettuce. I will also have cucumbers in vinegar water (that I made last night) with some Olive oil drizzled on top (I want to make sure I am getting plenty of fat because it really seems to make a difference).

Dinner will be a Beef and Broccoli Stir Fry Cooked in a combo of Coconut oil and butter with a little soy sauce.

Snack will be 2 pieces of Low Carb Peanut butter fudge.

Drinks: 3 cups of coffee, 3 cups of hot tea with Stevia and Coconut oil. The rest water.

Good morning everybody! Tooter, I'll be right over for a cup of coffee. heehee! I hope everybody had a great weekend!

So far today, I've had a little bit of roasted turkey lunch meat, and a stalk of celery with cream cheese (thanks for the idea, Tooter), and two cups of coffee with a dab of heavy cream.

For lunch, I'm having a spinach salad with Asian dressing and a sprinkling of shredded mozzarella and parm cheese, and celery with cream cheese and smoked tuna.

I don't know about dinner. I brought a small bag of pork rinds just in case I need a snack about 2:30, and I probably will.

I brought a big thermos of cold chai tea to drink throughout the day. I'm trying to kick diet soft drinks...yikes!

Pear, try Low Carb Luxury: A Complete Resource for the Low Carb Dieter. for some really good recipes. I looked over every section and copied and pasted a lot of great-sounding recipes. I'm so glad I found that sight. I also used this website, the recipe section, and found a lot of good ones to use and have already started on them. I made the Asian chicken salad, but used baked chicken from the grocery store. I have been using the salad dressing every day. I added more vinegar and soy sauce, and a spoonful of all-natural pnut butter, and it's really good. I've also made the deep dish pizza, the one that you pre-bake the pizza crust, and I used only about 1 tblsp of sauce because i don't like a lot anyway. It was so good and my husband loved it. He's not LC. I got ingredients for stroganoff and chili to make this week.

Lost and Found, congratulations on eating more. I'll bet you feel way better. I have actually not had any cravings because I've eaten enough that I'm not hungry, and the fat in what we eat helps the cravings stay away. Now, in two weeks, I may be overeating cheese because I'm wanting something else, like chocolate, but for now, I'm good. Any real cravings I have usually start after about 2-4 weeks. I don't know why!!!! Can anybody tell me? Did or do you have the same problem? But I'm afraid to start making any sweets with splenda or any sweetener, because I'm afraid I'm going to REALLY start over-doing it. Like I said earlier, I don't have any willpower and don't know when to stop eating at times.

Oh, by the way, I joined the YMCA yesterday (family membership). I hope and pray that I will go!!! I started walking Saturday. I've gotten really really lazy over the past 4 years. Everybody have a super day!

Back down half a pound. Wow, I fluctuate alot.

Tooter, you must get me the recipe for the peanut butter fudge, sounds divine.

Imustbecrazy, I'll check out that website for recipes during lunch, sounds like a great site.

Ailuros, I need to get my cards out too. I havent started but I do have them sitting on the island ready.

Wow, its ugly out this morning, standing water, all the snow is melted. This afternoon the roads will likely be closed in the valley due to flooding. Its been a crazy weekend.

My in-laws just booked tickets to come visit after new years. I have mixed feelings about that. We havent seen them for a couple years, but the last time it was kinda ugly. I'll be on my best behavior, promise.

Breakfast, so far: fiber and coffee with SF Hazelnut creamer.
Lunch: shredded chicken
Dinner: no clue

I put a roast marinating in the fridge for Dana Carpender's sauerbrauten, I'll marinade it all week and throw it in the crockpot on saturday. It was a strange marinade with vinegar and splenda. I'm all for trying new things since the old stew and chili crockpot standby's wont work for me now.

Right then, off to work. I'll check in during lunch.

Here it is Pear!

Peanut Butter Fudge

Almost as good as the real thing!!!! Beware! It's hard to eat just one piece.
Ingredients:

1 stick of unsalted butter
1/2 cup of peanut butter (natural peanut better)
2 oz. of cream cheese
1 cup of granular Splenda
2 scoops of vanilla flavored Whey Protein Powder


How To Prepare:

Melt the butter and peanut butter in the microwave on high for 2 minutes. Stir. Microwave for another 1 min. Remove and stir in the cream cheese until completely dissolved. Stir in the Splenda and then stir in the Vanilla Whey Protein Powder. Grease a 6 1/2 inch square container (I used a 1 quart corning ware cassarole dish. Line with wax paper. Pour in the dish. Put in the refrigerater until cool. To speed up this process place in the freezer until cool. Cut it into 20 - 1 inch square pieces.

It really MUST be made with unsalted butter. The first time I made it, I did it with regular butter and skippy peanut butter. The texture was awesome, but it was too salty.

The 2nd time I used unsalted butter and a Natural peanut butter (it doesn't have any added salt and healthy oils) It came out AWESOME!! Even family members who aren't on low carb couldn't tell it was low carb.

Oh, the Vanilla Whey Protein powder? I get it at wal-mart in the vitamin/supplement section. A Big Jar is about $11, but if you are getting the Dana Carpender cookbooks, she uses that alot. Don't worry, it will last you awhile. Alot of recipes use it.

Sorry, I only did mine because my husband nagged until I gave in and sat down with him to do them . Usually I regard it as a sign of weakness to start any Christmas preparation/shopping earlier than 20th December, but last year we were called at the end of November to say my MIL was being taken to hospital, and we ended up fitting in all our Christmas shopping online in between hospital visits, so I think he's feeling nervous this year - he's even bought quite a few of the presents, and had active input into what we're getting for the rest - other years it's all been left to me.

Its flooding here, the water is rising fast. The slough (outside my window) at work is almost up to the building now. Good thing the building is on stilts.

I'm keeping a close eye on the river to see if I should leave early. My dd is going to school today, she goes to community college near my work. I'm wondering if I should tell her to stay home. The river isnt at flood stage yet, but I dont know how quickly it will rise.

Last year, the flooding was so bad, we couldn't leave the community, all roads were flooded in. So, I'm hoping not to get stranded away from the house (poor little yorkies home alone).

Pear, stay safe. The Yorkies are going to be ok, they just might make a few mistakes. Better safe then sorry, if you are concerned call your Daughter and tell her to stay home. ((((((((((hugs)))))))

I told my daughter to stay home, she'll email her homework in.

The river is almost at stage 1, no roads closed yet. They close the route I take at stage 3. At stage 4, we're stranded.

I'm waiting to see if they close the office.

Back again! My department is getting inspected today, so I'm out and about. Pear, I hope everything will be okay! How scary for you! and, I hope your visit from your in laws will be a happy and good one this time when they come.

Well, I ditched my lunch plans and had Vietnamese Pho. I checked it out on-line, and without noodles, it's said to have 4 carbs. I hope that's right. It has bean sprouts, cilantro, peppermint leaves, lime, hot peppers, a few onions, and real thin sliced beef briskett and beef broth base with ginger. I hope I didn't totally screw my carbs up! Anybody know for sure?

By the way, Tooter, the fudge sounds out of this world. You've convinced me to go buy some Protein Whey powder. That will be perfect for my dh because he's diabetic. I'm really wanting to sway him over to the LC way of thinking, but he loves his pasta, bread and bagels so much. I've never bought any of that stuff in LC. I'm going to check out the ones I've been reading about, though. Where can they be bought other than on-line? I haven't seen them in the grocery. I really want us both to change our eating habits for the rest of our lives, especially since it would be great for him.

Yeh, with things like that, my motto is " why do today what you can put off for two or three more days, or a week?" I'm a major procrastinator!!!!! My husband is even worse, so I guess that's why I said that about yours. But you're right, it's not fun to be nagged.

Imustbecrazy, You can convert him. I get the Dreamfield pasta at my local grocery store. It's in a black box and says Dreamfield on it. Netrition.com (off of this site) also carries it.

We could teach you to bake for him. You could do that lowcarb too.

As far as bread, I go to Wal-mart and get the Joseph's low carb pita bread and low carb Lavash bread. Lot's of things you can do with those and just about 4 carbs per serving. I use the Pita bread for Pita pizza or Pita sandwiches for the family. The Lavash bread I will cut it down (each sheet) into about 4 squares, fry it in oil until it is crispy and then I will top it like a taco. Even the non-lowcarb people in my family love it. English Muffins? You could go for the Lite/high fiber muffins. Those would be much better for him. You could get those at your local grocery store.

You see, there are ways around it. You could get him doing this too. He might not go as strict as you do, but it sure will improve his health and control his weight.

The dreamsfield pasta? I have even used the spaghetti (broken in half) to add to a stir fry to make Beef Lo mein type meals.

Oh, just wanted to add, with the lavash bread you can make hogies/subs. Just lay the lettuce, meat, cheese in it, spread a little mayo and but some "dressing" on it and roll it up.

You also can make breakfast burritos out of it.

This weekend I made hubby a Cheese steak hogie in one and I made some breakfast burritos for the boy's that they just had to warm up in the microwave when they wanted them.

Thank you so much, those are great ideas, and I really love the idea of the frying the lavash bread. I hope i can find it! I'll check out the different stores in town to see what I can find. This forum has helped me out so much. I never thought that I would decide to do this the rest of my life, but I know it's going to be so much better for me (and dh).
