It's basically, Melted coconut oil, Cocoa powder and splenda or another sweetener. You mix it all together then put it in a pan lined with aluminum foil and put it in the freezer (to make it solid fast) then when it's hard you break it up like bark and store it in the fridge. I have added Almonds and unsweetened coconut to it and it's like an almond joy candy bar.

Sometimes Splenda and Cocoa can leave a slightly bitter taste (the two just don't seem to mix at times) it's never bothered me, but I am now experimenting with different sweeteners in the CO Bark. ALso thinking of adding a little cream cheese to give more of a milk chocolate taste. I'l keep you posted on it.

If you do a search on the bark at this site, you will come up with alot of threads and see the different recipes or ideas people have come up with.

I ordered some Dana Carpender's cookbooks on half.com. I have the crockpot one right now from the library. The recipes seem to be real good normal food. I cant wait for the cookbooks to arrive. The recipes sound so yummy. I spent a great deal of time on amazon.com reading the reviews.

Pear, I decided I am used to logging my food on Calorie Count Plus and it adds up the carbs to the fraction, much like FitDay so I will just continue to use it. I was thinking I might like to just log carbs but do like to see the percentages broken down.

My daughter ordered a palm for me today that can link up to Atkins software and my PC so we will see. Thanks for your suggestions.

I have Dana Carpender's 500 Low Carb recipes and have made her yogurt with powdered milk, it was awesome, actually, too good, if you know what I mean.

I hope everyone had a restful night.

I don't have her Crockpot one, but have almost every other one. lol She has Great Recipes for real food that you will use over and over again. Great ideas too. I think she has the Best low carb cookbooks for your money. More recipes in them then the other books and so many different types of recipes. You made a wise choice.

I hope you enjoy them.

Last night I ate, and ate, and ate....I was full!!! It felt good!!!! And it wasn't even cheating!!!

I had:
a small salad with cucumber (1 carb salad dressing)
shrimp-sauteed in lots of butter and fresh garlic
steak (lots of it)-grilled-with butter on top

Tommorow is the start of a brand new week...hopefully the whoosh fairy comes by!!!! I've been trying so hard....haven't cheated...except the two pieces of vienna bread on day one...it would really be nice to see something positive out of this....besides, it would be healthy to get this weight off!!!!

Lost and found, when you weigh yourself you should follow a few "rules". Weigh yourself in the morning, (Nekked, naked) after you have gone "Pee" and before you eat or drink anything.

Why? Well, depending on what we eat or drink during the day, that can have our weight show up higher. After all, food and liquids do have some weight to them, get what I mean? It's like the story (from my home town) about this kid who was a wrestler. They have to watch their weight and "Make weight" for a match. This kid had starved himself all week. Right before the match he was having Hunger pains and desided to drink a bunch of water because it had no calories and he thought it would make him feel full. When they put him on the scales to weigh him, he didn't make weight. The coach was shocked because the kid really did follow the plan. When he asked the kid what he did (and the kid told him) The coach almost cried. DUH, it might not have calories and it might not make you gain TRUE pounds, but it very much does have weight to it if you weigh yourself.

Did that help?

That's why if you weigh yourself alot at different times of the day, you will be all over the scales.

Best to stick with a certain time (Like I said in the morning) so that you can find your true weight.

Some times Us Oldtimers forget to say things like that to Newbies, because it's just a "given" for us now.

Jean, I think you'll really enjoy the palm, I know I do. I have some games on mine that keep me entertained when I have to sit and wait somewhere, not to mention the address book and all the other goodies on there.

The Atkins Carb Counter is easy to use and syncs up with its desktop software, so you can use either and it will keep you up to date.

I cant wait for the cookbooks to arrive, I hear so many good things. I ordered five of them. The BBQ one, 500 recipies, 500 more recipies, crockpot and 15 min or less.

Thats how I've always weighed too. Its funny, I find that if I weigh after my shower its lower than before. I cant explain it, my hair is still wet.

I'm being lazy this morning, I'm still in bed checking the boards. Gotta love sleeping in on the weekends.

Blasted, I showered and now I'm up to 223.2. Must have been water weight that came back. Oh well, still a good loss. I'll take it.

We had another two inches of snow that fell overnight for a total of four. Now we're supposed to get a warm weather system in and melt everything and flood the valleys. *Pear wonders if she can get to work tomorrow* Oh, and I forgot a wind storm today. *Pear goes to prepare for a power outage*

Good Sunday Morning, everyone. I am on my way out to take an 88 year old gentleman that can't drive out to brunch. I will have as many veggies as they can put in an omelet!

Lost & Found, it sounds like eating more is agreeing with you. I really have to work at getting even 1500 calories in but I know to be successful I must. I don't want to get run down. Those low fat days are still stuck in my head.

Tooter, you always brighten my day!

Pear, I may be asking questions if that is OK, when my palm arrives.

If anyone finds a recipe they just love, would you mind posting it? Some recipes, I look at and wonder if I should go out and buy the necessary items, how often would I use them, etc. The recipe boards, here, have my head swimming.

No snow here, just lost of rain.

I think I have more difficulty with my attitude than with my weight. Through my thirties my weight crept up. I hardly ever weighed myself, and I'd never dieted. Then my husband (who was more overweight than I was) said that he really wanted to do something about his weight, and suggested low carb, because someone he works with had done well with it. I looked into it, decided that it looked good, and started cooking LC for us. That was about four years ago. I lost about 25 lbs in the first six months, and have stayed in the 110-120 range for the last four years (about 116 now). The problem is that I always want to weigh a few pounds less. In some ways, it was better in the years when I was heavier but never thought about my weight. But now, if I don't pay attention my weight starts going up again, and if I do, I resent always worrying about my weight, and never being happy with it. I know I'm at a perfectly good weight, but I always want more (less).

Sorry, I just need to rant sometimes.

Hi. I'd like to join your challenge if I may.

Not much of a poster, but have been around since summer 2003. Had a different username, but when I couldn't remember it, I just signed up again using backspace1.

Lost my weight (15 lbs) rather quickly with Atkins and kept it off until a year later when I quit smoking. After quitting, I felt like a slug and packed on the weight quickly even though I didn't change my eating habits. Was up to 175 at one point. I was diagnosed Hypothyroid (Hashimoto's) and haven't really felt like my old self since then.

I am an old lady of 53, married with two adult daughters (1 lives at home), two indoor cats, and I work full time.

I can find any excuse to eat off plan, so I need to be accountable in some way. Plus we are going on vacation to Florida in Jan and I really need to lose 10 lbs.

So far today:
Coffee with cream - 3 cups
large salad with baked chicken, cukes, celery and olives
oil /vinegar dressing
water

Ailuros, I'd be thrilled with 116. I dont think I was that weight since I was 10.

I was going to go to the store and pick up the ingredients I need for some crockpot recipes but I am still waiting for the thaw. Today is my cooking day.

I know I should be happy with it - that's why I get so annoyed with myself . I'd think anybody else of my size who kept fretting about losing another 5 pounds was pretty silly! I was about 107 in my late teens, 110 through my early twenties (without ever dieting). I'm 5' 2", so those weights are slim, but not emaciated. And somehow, my mind can't quite let go of those numbers. Even though I'm 46 now, and I can see that women who diet hard and stay very thin don't look great.

Maybe I need to try some technique like switching to thinking about something else any time I start to think along those lines.
