I'm Texan
I live in San Marcos, Texas six months out of the year. The other six months are in the Middle East with husband working for oil company.
I just started back to low carb eating and after 10 days still feel nauseous and weak most of the day. Really bad weak feeling in the legs. I wish I knew all the initials everyone uses...I'm out of touch for sure. I don't know much about posting stuff. Very new at this. Cindy |

I feel like "more the merrier" and if we support each other, we can all end up looking swelve again. I haven't checked this site as I was at a conference right after I posted, then last week have been fighting a cold and trying to work. Sorry for the delay! I am feeling much better today, so back to exercise and posting this week. Wow, Anita, 40-45 lbs is fantastic! Way to go! We'll soon get you going again. Tereasa, glad to know where Kyle is! What's your game plan for losing the weight? Recluse, Austin is so cool. I love to visit. What's your plan also? Cindy Sue, wow, San Marcus is great also. I do admire you for being able to live two places each year. Hey, don't worry about being "new" to posting, etc. You'll catch on soon. Also, if you felt nauseaous and weak in your induction, you probably have lost too much fluid especially potassium & salt. That sometimes happens when you drop your carbs at first. I think in his book somewhere, Dr. Atkins recommends adding a few more carbs to keep this from happening, but check that chapter to see what he recommends. Your body has to adjust by making new enzymes to allow you to burn fat, as on a high carb diet your body gets used to utilizing easy carbs I only used Atkins for a short while, then switched to Protein Power, by the DRs. Eades, which is alittle more liberal on the carbs, 30-40/day. So, welcome, all, no matter what diet plan you are on. We can do this together. You can post daily, every other day, bi-weekly, or whatever suits your schedule ; we can post menus, trials, frustrations, or successes, exericse, whatever it takes to reach our goals. For me, I have found checking the site daily and posting keeps me on track as accountabiltiy for staying on plan. Here is Sunday: planned: eggs, bacon, few grapes or lc diet ocean spray cranberry juice leftover homemade chicken soup w/ non-starchy veggies baked chicken, brocoli, green salad I am going to try lite exercise again today: either body flex tape or a quick callenetic's tape. Hi fellow texans, I'am in Arlington. Would love to join your little forum.
I started low carb back in nov. I have tried many times before but gave up after a month,this time has been different. I pretty much stay on plan,but if I cheat,I have learned to get right back on plan and not let it bother me. So it has taken me a while but I feel I'am learning how to make this a permanent way of eating,not just a diet. I'am in a stall right now and the week before I cheated soooo bad,we went to Bass hall on saturday night,my dh took me to dinner,then that sunday we went to my mom's for her b-day party. I ate so much junk. Could not stop eating the cake. I gained 3pds. Well this weekend,did not cheat. My dh took me bass hall again last night and went to eat with my parents. No cheat. And I lost the 3pds I gained the last weekend. (and I wonder why I'am in a stall) LOLI hope everyone has a good day,I know here it is raining and bit cooler,I think I'am just going to stay home and rent movies. I might do some laundry ![]() |

Hello everyone!!
Kyle is between Austin and San Marcos. We (my hubby and I) are living the lowcarb lifestyle. We do not follow a plan of any kind or diet. What we do is eat as low carb as we can. thats it!! We don"t count carbs or calories but we are aware of them. We also workout as often as we can. I workout to the Biggest loser DVD's 5 to 6 days a week and do either boot camp or weight lifting every other day. My husband works long hours but he walks about 4 times a week and does weight lifting about 3 times a week as well. We only eat out once or twice a month. I do alot of cooking at home these days and it was hard at first but now I really enjoy it!! We do take supplements, drink protein drinks and lots of water! We eat 5 times a day. Our three meals and two snacks, so we never feel hungry!! Thats the best part!! I have a large group of weight loss friends on myspace and they have been asking me to make a recipe page. I dont think any of them are doing lowcarb but a lot of them wanted to try some of the recipes I have been making. So I started a page this weekend. It has a few recipes on there now and I will be adding more of them almost everyday. Some recipes are mine and the others are recipes are ones I have made and liked. This place has great recipes on here!! But I have also found other recipes that are so good and have came up with a few good ones of me own also. Teresa's Low Carb recipes and more I also blog alot on my myspace page as well (see link below).... This is so great to see the number of Texans growing on here!!!

Howdy......
Ft. Worth here.... Been here about 15 years now. Originally from Chicago area, 2 years in Tulsa and been in TX for the last 15. I am on Year 4 of this woe. No real progress the last 2 years, not for lack of trying, but lack of education on how the body/nutrition etc works (i.e. eating too many/little calories). But regardless of the bumps in the road this is how I eat now and will NEVER give up. I make most my meals on the weekends so I don't have to cook every day. DH isn't a fan of lc casseroles and such so sometimes I cook separate meals for him

Afternoon everyone. Someone mentioned its cooler outside today - sure is here and windy as every. I work nights and it was storming when I left for work at 12:45 am. Next months will be 4 years since I first started Atkins - daughters high school graduation. I have been maintaining since November of 04. Have to confess that I don't exercise at all but have a very strenuous job which keeps my upper body pretty well defined. Wish I exercised along the way - abdomen quite flabby. I actually purposly put 6 pounds back on after I hit goal - was looking a little unhealthy. I use many of LindaSues recipes. Love casseroles and such. Wish I could get myself to cook on the weekend for the whole week like one poster does! My downfall is beer. Not a sweet eater at all but I really have to watch the low carb bread. I bake in a scratch bakery and all of the sweet goodies and doughnuts dont tempt me but the potato rolls and foccacia smell quite appealing. Well - it was great talking to everyone and I'm going to make a point of checking here often!

Hello!! I have not been on the boards for a few days and I see this thread that taken off. I have never been a part of a challenge group before, so here goes.
I am at a serious stall right now. I stated Atkins in Feb 2007 (for the second time-lost about 40 lbs in 2004, regained most of it). I have been teetering between 161-163 lbs for the past 3 months and it is driving me insane. It is probably my fault. I do not exercise regularly. I walk occasionally, but need to do it more often. I just got the Shapely Secrets DVD’s so I am going to set a goal of doing one everyday. I have some old Firm workout tapes, but I just can’t find time to do them. I recently got blood work to check out my thyroid. I am trying vitamins and supplements to see if the thyroid is causing this stall, just started a week ago. And I do drink lots of water. Slendercate….I am interested in Protein Power, maybe it can help the scale move again. I will see if I can get the book, since I don’t know much about it. Teresa…thanks for the recipe link. Recluse….how do you work in a bakery and not want to eat everything….that has got to be hard. I can hang around donuts and not want them either. Have you ever tried the Oopsie rolls? I love those things and they make low carbing so much easier. I do try to make extra meals on the weekends, and I also use lots of LindaSue’s recipes. Today, planned: Breakfast: small portion of Italian Casserole (LindaSue) leftover (normally I eat an egg cream, but didn’t have time this morning) Lunch: salmon patty(lc), mock twice baked potato casserole (small portion), green salad Dinner: shrimp scampi with speg. squash and side salad Sunday Breakfast: egg cream (with protein powder) Lunch: mock twice baked potato casserole with large salad Dinner: salmon patty with mock twice baked potato casserole Snack: strawberries with whipped cream I know that my problems areas are with cheese, cream, cream cheese and sour cream…plus nut butters). Looking at my menu for these two days, it is pretty heavy on the cheese and cream. I can pretty much maintain while eating these, but losing has come to a stand still. Any recommendations would be helpful!!

Teresa...I just checked out your recipe blog. I love your slideshow!! You and your husband are doing so good!! According to the pics, you both look like you have lost much more than 50lbs (I would have guessed closer to 100lbs). Ya'll look GREAT!!!!
I looked over some of your recipes and I notice you use soy. I have a fear of too much soy. Have you noticed any problems with it? Maybe I am just being a soy-aphobe. |

Anital- I have not had any problems with soy, all is great!! Its good you are getting tested to see if it is causing your stall. As long as you have the drive your weight will start coming off again.
I saw the Doctor today ,, Great NEWS Everything went great at my check up!! I did realize that my scale I have at home (which I bought about 6 or 7 weeks ago) does not work right!! LOL,, The scale at the doctors office with my shoes on said I weight 266 pounds!!!! My scale at home with no clothes on says 270/269 depends on how I stand on the scale!! LOL. I was so so so so happy,, He looked back in my chart to see my starting weight from when he put me on his LowCarb diet and was shocked to see how much weight I had lost!!! 59 pounds to his charts!!! woohoo!! woohoo!! woohooo!! woohoo!!! He is keeping me at 500 mg of Metformin but I dont have to take any others meds!!!! He is a small town doctor here where we live and he told me that in his 30 years of pratice he has never had a diabetic patient do so well and change there health around the way I have!!! another woohoo!!! He said he wish he could have his other patients follow me around so I could teach them how to do it!!!! LOL...... He made my day!!!!!!!! |

High Five on the great checkup Teresa! I think the medical community is slowly starting to come around. After I saw doc for first time after losing weight he asked me how I did it and I told him he probably wasn't going to be thrilled. He said that he isn't really concerned with how I did it as much as he is glad that I did. Someone asked if I had tried the oopsies..No I haven't. I usually make the "Best burger buns yet" from the recipe room. I believe it is Cheris recipe. I love these. They are made on a waffle iron and they actually double as waffles. I toast them, put butter on them and some sugar free maple syrup for a quick and easy breakfast. I was out and about today buying some groceries when I finally really started paying attention to some of these increases in price. Wow! I live alone so much of the stuff that is really gone sky high (milk) I don't even ever buy. But - mayonnaise? Yikes! Well going to pan fry a strip steak (on sale at HEB this week Teresa) and I have a sweet potato baking so I can get some sleep before working tonight. Talk to everyone soon...Eileen

Hi Ladies- I am in San Antonio (Although we lived in Ft Worth previously...Hi TXLoser!) It is so beautiful here today! Cool and sunny- I am enjoying it while it lasts.
Back on induction- enjoying homeschooling and drinking coffee (Nope- won't give it up! ). I just want to keep up with my very active hubby and kids-- sick of being on the sidelines. My big goal for the week is to try an egg cream....I will do it. Maybe - I got some pasteurized eggs- so it may happen! |

Eileen, I tried to find the "best burger buns yet" in the recipe room, but I didn't see them. Could you share? I am interested.
Hi, Michelle(byrmic) -- welcome!!! I just started egg creams about 2 weeks ago. I am very squeemish (is that a word) about raw eggs. I did a little research and the chances of getting salmonilla (sp)poisioning from raw eggs is about 1 in 30,000 eggs. One trick is to crack the egg into an empty cup and smell it. Eggs should not have a smell. You can not taste raw egg in the egg cream at all. I actually started out with one egg and I now sometimes use two, depending on how hungry I am. I used to drink coffee with cream in the mornings. I gave that up about 2 months ago, checking to see if it was the reason for my stall. My stall is still going on, so I don't think it was the coffee. I lost fine while drinking it before this stall. I think the coffee thing is a YMMV (your milage may vary). |

Hello all.
It was just gorgeous out last night..finally got to enjoy being outside without allergies/sinus problems. Took my dog for a walk and just enjoyed being out. I never did have allergy/sinus problems until I moved to TX. oh well... Have you guys seen the pizza recipes on recipe section. Last week I made probably 4 cauliflower crust pizzas!!! They are really good, and you hardly even taste cauliflower..good way to get my veggies in . There are several versions with different crusts so check them out. Hope you all have a great day.... |

Hi Anita - found the "bun" recipe. Wish I knew how to link so I could just send it to you. It is in the Recipe Help and Suggestions board. Under the "Recipe Stickies Have Been Moved"...They are called something like "Best Ever Burger Buns Yet and Super Easy". I love these - and they use only about 3 ingredients. Eggs, cream cheese and low carb bake mix - I use Bob's Red Mill. Sometimes I throw a handful of shredded cheese in also. I don't use the onion powder. If you cant find the recipe let me know and I'll be more specific. I keep getting a "Server is too busy - try again" message. Hope this helps!

![]() I can't believe the thread I started! I am excited! I was hoping atleast 1 or 2 folks who would like to post, but wow, we can really lose now. Recluse, (Eileen),wow, I admire you for being able to work in a bakery without sucumbing to all those sugary goodies! I am going to try Bob's Red Mill baking mix. The buns sound so good, too. I have never tried an eggcream, but your recipes sound so good, I am going to try them. Txloser, (Diane) the cauliflower pizza crust sounds delish. I had used CarbLowdown crust, but allthought good and resemble real pizza crust, they also have a "gaseous" effect on my gI tract! Not too great for work. Teresa, way to go with the great doc appointment. I have trouble understanding the new diabetic diet of "good carbs, bad carbs". To me, if you are carb intolerant, which is a problem with diabetes, why keep on trying to eat them with the same disasterous results? 30 years ago, our woe was the diabetic diet that was recommended. Anita, arean't stalls the pits? Have you tried to up your carbs a bit for a day or two? I have used that trick in the past. I hope I don't get into trouble, but Protein Power has a website, Protein Power which explains the Eades diet. On PP, I try to keep my carbs at 30-40/day, but to break a stall, I recently upped them for two days to 45-50/day. Don't know what happened, but I starting losing again. Today was good, stayed on plan. My cold is finally getting better, I am feeling a bit better, so I am going to try an exercise tape (20 min) tonight. Well, got to go to fix dinner, tonight it is liver and few onions, bell pepper, sauted in a little olive oil. Will check in with y'all tonight. So happy about the TX Low carbers! Texas in ten days
I am so looking forward to getting back to Texas and seeing my kids. I love this internet site and have been learning lots from it...oil pulling is a new one. I have my husband doing it. Soy problems I didn't know anything about. Learning about products I look forward to buying when I get there. Can't wait to try the burger buns people are talking about...need that low carb baking stuff first tho. And I will go out first thing and buy some CO...

questions
I need to make some food to put in the freezer for my husband to eat while I'm in Texas. Can anyone tell me if casseroles with cream in them freeze okay? Any general rule about deciding what can freeze well? Any suggestions are welcomed. I've been spending hours looking at all the recipes on this site...it's really great. I love the reviews...they really help.
