May 4 Here's another one of our favorite Mexican recipes. This dish calls for Halibut but any light fish will do. Enjoy! Halibut Veracruz Ingredients 2 tsp. olive oil 1/2 c. yellow onion, sliced 1 tsp. minced garlic 1 c. diced tomato 1 sm. jalapeno, diced 1 tbsp. margarine 1/2 tsp. salt 4 sm. Spanish olives, cut into thin rounds 1 tbsp. fresh lime juice 1 tbsp. chopped cilantro leaves Preheat oven to 350 degrees. Heat oil in medium skillet over medium heat. Add onion and garlic, and cook until lightly colored, about 3 minutes. Add tomato and jalapeno. Cook for another 5 minutes. Spray a separate skillet with non-stick cooking spray. Season fish with salt and cook in skillet over medium heat for 2 minutes. Flip fish and transfer pan into preheated oven and bake until cooked through, about 10 minutes. Just before serving, add olives to vegetable mixture to warm. Serve fish with a spoon full of vegetable mixture on top. Makes 2 servings 8 Carbs per serving |
