Not enough carbs?

ok so its been about a week since the scale has moved.. I know its a bit soon to come to conclusions.. But is it possible to not be eating enough carbs?
I usually have anywhere between 5-12 carbs a day..
I started eating some cheese again, and I dont even want to think that its the cheese thats stalling me.. It almost makes me want to say:
"hmm be fat or eat cheese, thats a tough one" lol I LOVEEEEEEEEE CHEESE!

I'm trying to jump start it again, so yesterday this is what i ate:
one for breakfast and one for lunch: 2 eas low carb shake (110 calories 2g's of carbs each)
dinner I had 2 bonny bell cheeses 60 calories each no carbs
a small hand full of pepperoni (about 90 calories or less i usually round up and no carbs)
and a few tastes of hubbys sausage (ok i didnt realize how bad that sounded so my appologies ) but the night before I made him and my daughter italian sweet sausage and tomato sauce for dinner with pasta.. so I tasted some of the sweet sausage..

and I also started taking the CLA supliments on thursday.. so its almost been a week now, and i dont really want to think about how my weight has not moved since i started taking them...

It looks like too many shakes-stall many people and I see no healthy veggies. Your body has probably gone into starvation mode and it's not gonna let go of any fat if it doesn't think its getting the nutrients it needs. You can damage your metabolism eating like this.

sounds like a good idea, im taking a multi.. but i should prob eat more veggies..
i have this new fear though now.. its so demented.. im so scared of gaining weight so badly... that im almost afraid to eat..
I just started drinking protein shakes yesterday.. before that I was pretty much eating tuna, chicken, some cheese, and eggs..

One other idea, could be too much sodium from cheese/pepperoni/sausage, those are all typically higher and could be helping you to hold onto some water. Adding in carbs from low carb high fiber veggies is a good thing, not something to be scared of! The more you experiment adding in bits of other foods, the more confidence you will gain in yourself, and its keeps things more interesting and makes the woe more workable. I know when something worked for you, the inclination is to stick to it and not deviate, but I think the more you "tweak", the more you'll feel more in control of yourself, and it will be less scary.

Both the cheese and especially the pepperoni are high salt and salt leads to water retention. Also the Italian sweet sausage is loaded with both salt AND sugar. You need to stick to the Kimkins meat list of poultry, fish and lean beef and pork, eat your salads and salad veggies and your allowable other veggies rather than all that processed meat and cheese. Most people on Kimkins use cheese as a condiment--in other words just a little sprinkled on top of food once in awhile.
