Please share your Kimkins Meal Plans
Hello Everyone,
I am a kimkins newbie and is truly struggling to not give in to the late night snacking. I have successfuly kept my carb count down 20 or less but my calories are kind of high (1000-1100). I mostly consume egg beaters, turkey hotdogs and grilled chicken. Can you all please reply by posting some of your meal plans. |

I eat:
turkey burgers chicken lean beef tuna tilapia salmon shrimp I eat veggies also, mostly salads with romaine and low carb italian dressing or oil and vinegar My calories are also around 1000. Are you looking for recipes? |

I'm currently doing K/E to kickstart my ketosis, and will probably stick with that during the week, and on weekends add a few veggies here and there to break the monotony of just protein.
My daily menus look like this on K/E: Breakfast: 1-3 hardboiled eggs, depending on how hungry I am Lunch: either steamed fish (4-8 oz), grilled chicken or turkey (4-8oz) or homemade turkey meatballs (with herbs, mustard, garlic, egg and tamari sauce) Dinner: same as lunch. I try not to eat too much beef, as it seems to trigger cravings for some peculiar reason! On Kimkins I'd probably add a cup of salad veggies at lunchtime and one at dinner time or a half cup of steamed veggies like asparagus, broccoli, cauliflower, zucchini or cabbage. My calories vary between around 750 and 1150, depending on my hunger levels! Hope this helps, xxx. |

Here is the Egg Beater Muffin receipe from Amy's Kimkins Videos. I added mozarella cheese and 1 turkey pepperoni to each muffin.
Ep. 12 - Egg Beater Muffins I never seem to have enough time in the morning to make a Kimkins-friendly breakfast. Lately, I had been stopping at McDonalds to get the scrambled eggs. They're sort of on plan but a little higher calorie and fat than I want so I wanted to make eggs that I could bring to work and reheat. These are perfect! You can add any sort of filling you want. Recipe: • Eggbeaters • Filllings Spray a muffin tin with PAM. Add eggbeaters to each muffin cup (about 3/4 way full) and add any fillings you want in your muffins. Bake at 350 for 30 minutes. 2 muffins would be a good serving amount. Pack in tupperware and reheat in a microwave at work. These sometimes deflate when you take them out of the oven - don't worry they still taste good! The nutrition counts will vary depending on what fillings you add, but eggbeaters are really low calorie and carb so these are the perfect breakfast food!

I also eat alot of eggs, and chicken. Last night for DH and me I grilled chicken and I made a marinade for shrimp. On the ask kimmer thread she says that marinades are o.k. as long as you throw out the extra. So I mixed 1/4 cup margarita mix, dried cilantro, and 1 tsp. garlic in a ziploc bag and added about a lb. of medium shrimp. Let that sit for about 30 minutes and then remove the shrimp from the marinade and grill. It was delicious. I marinated the chicken in about a tablespoon of worschestire sauce, about three breasts and grilled. I served this with a mixed green salad of which I had about 1 cup. I didn't end up eating any chicken because the shrimp was enough for me. But my hubby needes the chicken and the shrimp. The margarita mix looks like it has alot of carbs but 1/4C divided among the shrimp and the extra discarded it would be hardly anything. This diet can get boring but just be creative and you can spice it up a bit. I also make slushies with the sf snow cone syrup and ice or sometimes a diet rootbeer and ice. Really satisfies the sweet tooth.

I marinade chicken breast in italian dressing for a day and grill-delicious! I make alot of diet bbq cola chicken too. So breakfast is eggs and turkey bacon, lunch protein shake or boiled eggs, dinner chicken and veggie. Sometimes a sf jello and once in awhile a chicken caesar salad.
Cola BBQ Chicken Ingredients: 4 boneless, skinless chicken breasts 1/2 C Heinz 1 Carb Catsup 1/2 C Diet Rite Cola Put chicken in nonstick skillet. Pour the catsup and diet cola over the top. . Bring to boil. Cover, reduce heat and cook for 45 minutes. Uncover, turn up the heat and continue cooking until the sauce becomes thick and adheres to the chicken. It turns into the most incredible BBQ sauce. I often leave the lid slightly tilted during cooking time. It helps the sauce to "thicken!" Enjoy--it's great.
