I use whole eggs. I just bought some eggbeaters today so I will try those. This is the first time I have bought eggbeaters so we will see how it goes. I've tried salmon and tuna from the can.

Tried the Ginger glazed mahi-mahi yesterday (only I used tilapia fillets since already had them). Since I was cooking 5 fillets I quadrupled the marinade recipe (except for the balsamic vinegar, which I only doubled, which was plenty). I also used just 2 drops of sweetzfree liquid splenda instead of splenda packets, which saved a couple carbs. Pretty good!

Splash - I actually LOVED the orange chicken - once the chicken is done, let the sauce simmer/reduce until it thickens into a glaze coating the chicken - it made great wings my teens loved. If you try it, I hope you're not disappointed...

Was going to make a plain ol' little pork loin for the family's dinner tonight... any great suggestions to make it something 'better then blah'?

Oooo, I'll have to try that with the Orange Chicken next time. Yummy!

I tried the Coconut Lime Chicken last night and it was yummalicious! I agree it's a bit too limey, but it was still very yummy. I'll definitely be making it again. Tonight, I'm trying the Larb recipe.

I tried the orange chicken. It was good! I would marinate it longer next time. She does recommend a full day...I think. I forgot and only marinated mine for 1 hr. I will make it again.

I finally made the chicken larb last night; I found fish sauce at Safeway.... The dish turned out very well (actually I used a recipe I found online instead of Amy's video, because I wanted something I could print out and read while cooking). It was easy, so filling and just simply tasty! I served it on lettuce leaves that we used like roll ups. Made a side of white rice and stirfried snowpeas for my dh. He really loved the larb and this is so easy it will definitely be on my list of permanent faves. Thanks, Amy!! Think I will mosey on over there and see what she's cookin' today!

Larb Gai - Spicy Thai Chicken Salad Recipe

Use fresh herbs in this recipe, dried will not even come close! Use of boneless, skinless chicken and no added oil makes this a very tasty low-fat dish.

4 servings
time to make 25 min
15 min prep


1 lb boneless skinless chicken breasts, minced in food processor (do not substitute pre-ground chicken, it is too fatty!)
3 tablespoons chopped fresh cilantro
2 spring onions, chopped
2 tablespoons chopped shallots
3 tablespoons chopped mint leaves
1/2 teaspoon cayenne pepper
2 tablespoons lime juice
1 1/2 tablespoons fish sauce
1 teaspoon garlic and red chile paste
thinly sliced cabbage or lettuce, for serving
fresh cilantro, for garnish

1. Heat nonstick skillet over medium heat, no oil necessary.
2. Add chicken, stir until cooked through.
3. Remove from heat, drain excess liquid.
4. Add fish sauce and lime juice.
5. Toss all together with cilantro, onion, shallots, mint, cayenne, rice powder, and ground chile/garlic paste.
6. Adjust seasoning to taste.
7. Serve immediately over lettuce leaves or thinly sliced cabbage.
8. Garnish with cilantro sprigs.

I found it! I must say the smell had me turned off...but it tasted good! I still am hooked to the coconut chicken, but the larb was good to have something different!

oh my goodness!

Someone just told me there was a whole thread over here so I had to pop over and see! Dedicated - I should hire you as my publicist when Food Network begs me to come to a show for them (I won't hold my breath on that one)! I don't get a chance to venture out of the Kimkins site much (hard enough keeping up!) but glad you like the recipes (or at least most of them!!!). In retrospect, I didn't like the Chicken Marsala either! The Larb on the other hand - I think I ate that for two weeks straight! Anyways, just wanted to pop over and say hi!

I just tried to make the evil cookies and the batter was soooooo good, but when I microwaved it it came out really hard and dry Next time I try 15 seconds and see if that makes a difference

Amy, just wanted to say THANK YOU for your fabulous site! You are adorable! I'm not doing Kimkins but your recipes have given me some great ideas for low carb food. I LOVE the Larb and the Tamago. I've been eating the Tamago everyday for the last 3 days. I cheat a bit and just bake a bunch of scrambled eggs in a pan to make a big ole' brick of eggs then slice them into "Tamago size" bites then dunk in Soy Sauce with wasabi. Oh and I add some fish sauce to the eggs along with the Splenda. Fabulous! I feel like I'm eating sushi!! I can't wait to try some more of your recipes. Keep up the good work and thanks for taking the time and effort to share your great ideas!

So I must say the smell from the fish sauce has truly turned me off! I need to learn how to cook with it and not really smell it!

All great!

The only one I didn't care for is the chicken tenders recipe. However, I tried to use faux chicken and let me tell you that is not a good idea!!!

Did you mince the chicken raw or cooked? sorry if that is a stupid question but I was just wondering I am like Amy
