So i tried the Indian Shrimp...but with beef (i was in the mood) and it was pretty good! I added a little curry seasoning and a little splenda to thicken the sauce i def have to make this again!

I'll make it with shrimp prob tomorrow....I'm looking forward to that

I have egg muffin cups in the oven. I put diced jalapeno and a tad of tomato in the bottom of the cup. I also put a tad of chili powder and cumin in the egg white. I hope they are good because mexican food is my fave.

I am thinking I may try the capers soon. I need variety in my life! :-)

I think I'll try the indian dish thanks to Dedicated's review. I haven't had anything with curry in years.

I just love these videos. This morning I had the egg beater muffins. I added mozarella cheese and turkey peperoni and it was FANTASTIC!!!!!!!!!!!!!!!!!! Just had my dessert after dinner and made the FF Vanilla Diet Rootbeer Float and it was DELICIOUS!!!!!!!!!!!!!!!!!!!!!!! Thanks again Ms. Sunshyne for posting these website.

Dedicated - thank you SOOOOO much for sharing this site -- I've only had time so far to watch three of her videos but I enjoyed all three and can't wait to check them all out. It's so gracious of Amy to share all of her recipes. Even though I keep my total carbs under 20, I know I've been eating too much fat, protein and calories if I want to see quicker weight loss. I'm making the orange chicken (but with wings) - only thing I added were some red pepper flakes to maybe add some spice - hope that's not a mistake...
I'm trying the Larb and the coconut lime chicken next.

Found this one on the Kimkins site!


Kimkins Portabello "Pizza"
Authentic dishes aren't always necessarily traditional ones, especially when we're looking for low carb alternatives.
Here's a twist on the traditional Portabello Pizza with reduced calories and carbs to make it even more delicious and weight loss friendly! Great for the grill, too! Try minced deli ham to save even more fat calories!
Better yet, once cooked they freeze well and I've always got a quick "pizza" when I'm placing an order at the local pizza delivery for my boys.


Ingredients
Yields 1 "pizza"

1 Portabello mushroom, stem chopped and set aside
1 Roma tomato, peeled, seeded and mashed
1 oz part skim mozzarella or parmesean, grated
2 tbsp turkey pepperoni or sausage, finely minced
1 tbsp each yellow & red bell pepper, chopped
1 tsp fresh basil, chopped
1 tsp garlic finely minced (jarred OK)
1/2 tsp Italian seasoning
1/2 tsp each onion powder, black pepper, salt
Preheat oven broiler to 500 degrees.


Mixed mashed tomato with Italian seasoning, garlic onion powder, pepper and salt, set aside. Broil mushrooms caps for 3-4 minutes under the broiler stem side down, then turn and grill the other side for 3 minutes.

Remove from broiler and layer with tomato mixture, turkey pepperoni, mushroom stem, red bell pepper and top with mozzarella. Place filled mushrooms back in the broiler for 1-2 minutes until cheese is hot and bubbly.
Remove from broiler, sprinkle with minced basil and let rest 2 minutes before serving. Enjoy! I add a side salad for lunch or dinner.
Calories: 193
Carbs: 10 grams
Protein: 20 grams

Kimmer's Recipe Box


Chicken Crepes Florentine

What a simply beautiful dish! Crepes always make an elegant presentation if you're having company -- and these are perfect for Kimkins dieters!
Many thanks to Kimkins member, Lisa Jackson, for her recipe & photo!
Ingredients (makes 2 crepes)

3 large egg whites (set yolks aside for hollandaise sauce)
1/2 chicken breast
1/2 cup frozen spinach, defrosted
1 mushroom sliced
1 tsp chopped onion (optional)
1/2 tsp olive oil (optional)
1 Tbsp (per crepe) shredded low fat mozzarella cheese (optional)
1/2 to 1 packet of splenda (depending on how sweet you like your crepes)
dash of salt & pepper
dash of cream of tartar (optional)
butter flavored nonstick spray

Filling: Season and bake the chicken breast at 350 degrees for 20 minutes or until nearly done. Combine spinach, mushrooms, onions, olive oil and chicken in a small nonstick pan and sauté over medium heat until well mixed and chicken is cooked through. Set aside.

Crepes: Combine egg whites, Splenda, salt, pepper and tartar in a mixing bowl and beat until slightly frothy (I use the Silver Bullet Mixer). Lightly spray small nonstick pan with butter spray and pour half of egg white mixture in pan making sure you cover the bottom of pan so you have a well formed pancake shape crepe. Cook on medium heat until slightly brown on bottom and top is done enough to lightly spray with butter spray and flip over.

Remove after a few seconds, place on plate and add 1/2 of chicken mixture on top of crepe. Sprinkle with mozzarella if desired. Roll the crepe over chicken mixture. Set aside and continue to second crepe. Once crepes are complete make the hollandaise sauce (optional).


Hollandaise Sauce

Ingredients

3 egg yolks
1/2 - 1 packet of Splenda
1-2 Tbsp hot water
1 tsp white wine or white wine vinegar (more tangy)
2 tsp "I Can't Believe It's Not Butter", melted (or use spray since it's already liquid)
dash of salt & dash of cayenne pepper
parsley (garnish)

You will need a double broiler or a medium pot and a very small non-stick pot (I use the two pots).

Fill the medium pot with 2-3 inches of water or however much to avoid spilling when smaller pan is placed inside. Over medium heat bring water to a boil. In a small bowl mix egg yolks, Splenda, white wine, melted butter, salt and cayenne in a mixing bowl or Silver Bullet. Mix well until creamy. Pour mixture into the smaller pot and whisk mixture quickly until thickened (happens quickly!)

Remove from heat to avoid curdling. Aadd an extra tablespoon of water if needed for proper consistency. Taste for seasoning. Add parsley for garnish if desired and serve!

Mmmm .. that Rootbeer Float IS good! I had to stop after work to buy the ingredients and I'm so glad I did!

After seeing the look on my 6-yr olds face after tasting one, I don't know if I want to try them. He ran from the kitchen to find his cup of juice

When I make that recipe, I'll probably put just a couple capers on a small piece of salmon to see if I'll like it. I'd really hate to put it over the whole thing and end up wasting it.

I found her site from a link on Jimmy Moore's blog, I think. I really love watching her, I find her most entertaining! And the recipes I have tried have been good. I did not try the cream soda float, though, because I was afraid I would like it too much....

Ok so i just tried the coconut lime chicken and it was great!
You really only need half a cup of coconut milk and I would go easy on the lime or lemon! But it was great...I'll make it for lunch tom if it doesn't stall me.....

I tried the orange chicken and loved it. I only had some wing drummies so that is what I used (maybe 2-3 pounds of them?) and I marinaded overnight. Instead of baking in the oven (it's so HOT) I just let them simmer in my favorite electric skillet (with the lid on). After about 20 minutes I took the lid off and let the remainder of the liquid reduce and I had a delicious thick orangey glaze all over the chicken. I had to make myself stop at 4 little drummies.... (thank goodness for teens who gobbled the rest of them up and saved me from myself). I'll definitely make again.

Planing to try the coconut chicken for dinner tonight (bought the lite coconut milk).

Might make a double-batch and freeze some since I don't want to waste the rest of the can of milk. I don't know ... think the leftovers will freeze okay for easy lunches/dinners?
