DD Tuesday menus!

Good morning

Going to make a pot of soup for today and just have it as I need it.

1 cup water
1 dried red chili
1 stalk lemongrass
1 clove garlic, sliced thin
1/2” fresh ginger, rough chopped
zest of ˝ a lemon
4 cups swanson lower sodium chicken broth
1 can bean sprouts
2 stalks celery, sliced thin
1 carrot, sliced thin
1 zucchini “noodled”
1tsp red boat fish sauce
1T gluten free tamari soy sauce
1T unsweetened rice vinegar
salt and pepper to taste
cilantro, chopped roughly(optional)

In the cup of water simmer the lemongrass, chili pepper, garlic, ginger and lemon zest for a few minutes until fragrant.
Add the carrot, celery, bean sprouts, fish sauce, soy sauce, some salt and pepper and simmer
2-3 minutes until veggie start to soften.
Add the zucchini and simmer 1 minute until just heated through (so the “noodles” don't get mushy).
Season with salt and pepper.
Serve with the cilantro stirred into the hot soup, if using.

eek I probably won't be eating that soup all day. I just checked the sodium all totaled up and it's over 5000mg lol.
So yeah, maybe 1 cup of that then something a little less sodium filled.

I'm so bad about salt. I don't even track it, but I add salt to my bagel/cream cheese, and add it to my chili as well. I salted my bison burger at BJ's last night, and we all know how much sodium is in restaurant food!

I do, too lol. I'm trying to be better about tasting things before I grab the salt shaker, but it's a hard habit to break
