Off topic--How do I rescue uncooked rice?
 
I made a dish tonight with chicken and boursin cheese with rice in it, and apparently didn't put enough water...I was going to make the rice separately, but the chicken dish was so watery I estimated and added a cup of rice to it. 20 minutes later, some of the rice was still crunchy, so I added some chicken broth and cooked it for 15 more minutes. It's still got undercooked rice in it. Is there any rescue for this?:dunno:

You need two cups of liquid for every cup rice. Maybe add more broth.....?

I know. :) I know how to measure rice and water and get a perfect consistency. I don't have any problems cooking rice usually, but I took a leap of faith and estimated that there was enough liquid in the pan for a cup of rice. I was wrong, lol. Still trying to cook it a little longer with more liquid.

I fixed it. :) It is definitely cooked now, and a little mushy, but still good.

I just added a little more chicken broth and cooked it for about 15 minutes longer. :)

ETA: Being a southerner, I thought to myself--you know, all those great cooks who cook chicken bog all day long, and the rice gets mushier and mushier...obviously, you can keep cooking the grains and they will absorb more liquid. :)

I was a little panicked when bf said, "It's okay. The rice is a little underdone." I've been getting, "It's okay" on a lot of meals I've cooked lately, and had planned for this one to be "special". Ugh, oh well.
