Low Cal Crepes or Tortillas
 
I will put this recipe on the DD recipe board but I had to make sure everyone saw it first.

I came up with the recipe this morning and they turned out great. They totally stay together and can be held in your hand and are really low calorie.

Dry ingredients

2T oat fiber
1/2T gelatin
stevia or low cal sweetener if using dry
1/2t baking powder
1/2T coconut flour

Wet

1/4 C plus 1/8 C egg whites
A little coconut milk or almond until thin
I added some almond extract

This made 3 perfect crepes. They are thin and hold together really well.

I cut up 1 apple and cooked it in walden farms pancake syrup, cinnamon, ginger and turmeric paste and cooked until the apple was really soft.

I put some walden farms cinnamon raisin peanut butter and a couple of pieces of the apple in each one.

I am saving about half of the apple to munch on through the day.

The crepes are about 100 calories for all 3 and then half the apple is about 40 calories.

Great low cal breakfast and very very filling!!!

i'm gonna try making these savory too with some garlic powder to fill with maybe cabbage stir fry or something. These would be great on UD's for those of us that eat low carb. Filled with anything you would use a tortilla for.
The possibilities are endless!!!

That does sound good, Shelly.

I also like the simplicity of cream cheese and egg crepes, which are pretty low calorie as well and can be used as pancakes or crepes. Just use 3 oz of cream cheese and 1 egg, blend and pour into rounds in a non-stick skillet and cook like pancakes. Very low carb and about 370 calories for the entire batch if using full-fat cream cheese. It makes about 6 pancakes. You could add cinnamon and sugar substitute also (as I have), if you like your pancakes that way, or even fruit like blueberries or strawberries. I haven't tried them as a savory base for something like meat, but it's certainly do-able. :)

On UD's butter is delicious for cooking them, but you can just use an oil spray as well.

ETA: I just read some of the reviews and people have used LF and FF cream cheese with good results, as well as just egg whites (instead of whole eggs), so it can be made even lower calorie. Also, others have used it as a savory meal kind of like an enchillada with various fillings. I'm thinking cheese, folded and topped with salsa would be very good, for one idea.

DD if I have these, it's one whole egg and the remainder as eggwhites (if I'm cooking for 2) because I like the yellowish colour. I tend to put tomato and red pepper on top or spinach and onion.

I've only done this recipe with the full fat cream cheese so I must try it with the lighter ones.

On very light DDs, I can heartily recommend Ouzoid's Tortillas - they're eggwhites and psyllium and people in that thread have used them in many interesting ways.
