Hmmm. Had my coffee and CO so far.
Maybe bacon and fried eggs for brunch. I don't do early breakfast.
I go to work at 1pm and I don't get home till 9:30 pm on Tuesdays. So I am thinking some chile for dinner with a piece of grain free bread.
Some chocolate for snack. Hmmm. I need more. Got to load up something else in my lunch bag.

Cindy, how do you do your chicken curry? I notice that curry is a very popular dish in Britain, as it's often referenced by my British FB friends.

Have a good day, everyone!

Chocolate pro shake
Egg, sweet potato hash
Orange chicken over spinach
Banana pro shake
Shrimp cakes, stir-fry veggies

Easy shrimp cake recipe:
(found online)

1 lb. raw shrimp, shelled & cleaned - roughly chopped
1/4 cup coconut milk (full fat)
2 TB chopped cilantro
1 tsp minced Thai pepper (hot stuff!)
Pinch of sea salt
Squeeze of lime

*In food processor: pulse shrimp, coconut milk, cilanto and minced pepper - pulse 10 to 15 times. You want to combine the mixture but keep it slightly chunky.
*Drop a good tablespoon of chunky batter into (a little) hot oil.
*Fry 2-3 on each side.

Makes approximately 15 small cakes.

So added a one minute chocolate mug cake with healthy fudge frosting (was going to put where I got the recipe from but can't remember if that's ok to do or not, so I won't).

Supper will be meatballs with white gravy, stir fried mixed veggies and alexia sweet potato fries.

Should come in just under 1700.

Tina, I got the 1MM from this site. I don't have the frosting recipe, but I think you can post it, if you don't reference the source (or maybe you can). I used 4-3-1 rather than 3-2-1...

4 T of cake mix (angel food cake mix, mixed with any kind of other cake mix)--I use an empty coffee can (washed) and it works perfect
3 T of water, milk or cream
1 Minute in the Microwave (in a coffee mug)

Empty cake onto a saucer or bowl if you want to pair it with ice cream (like I do). Ice with coconut butter, or canned frosting or make your own! The original 3-2-1 with water is 80 calories (1 serving), without frosting.
