Up Day Wednesday - Plans?
 
I started off with fried fish.
I'm going to have sashimi for lunch.
And probably kippers for a snack. :)
Don't know about dinner yet.

We posted an UD thread at almost the exact same time. Only two mintues apart, and that's probably only because I'm gabby haha!

Great minds think alike!!

Here is my UD:

Breakfast: coffee with cream, and a bagle with cream cheese
Snack: Pretzels, small bag
Lunch: Hummus with triscuits and carrots
Snack: Fiber one bar
Dinner: Chicken breast, baked with corn and potatoes

That puts me around 1573 calories...
We'll round, so say 1600.
I would like to be at 1800 calories at least, but I'm sure I'll manage to find a way to add an extra 200 calories.

B-coffee w/HWC -180
flatbread sandwich w/egg/spinach & cheese - 180

s-apple w/PB2 chocolate - 105

L-Atkins frozen meal - 360

D-fried chicken, mac & cheese, collard greens, black-eyed peas, rice :)

some kind of dessert (lunch will be from the faculty cottage here, and includes dessert--menu always the same on Wed., but desserts vary)

Today is a crazy day for us!

B - 2 eggs/toast 300c
S - protein granola bar 190c
L - salad 300c (will count for certain as I make it)
D - supposed to go for Mexican as it is the Middle School sponsored night, but church and such is all going on, still trying to figure out how to get it to go to benefit the school!

1900c is the goal!

D: Grilled hamburger w/cheese on portabella mushroom caps for buns. I've never done this but it looks really good and I'm just not into the buns anymore.

I am feeling better today(so sick last night! :( )
So I had a pancake this morning... No other plans, but I am sure I will find enough to eat for my UD.

Cindy-- lunch or dinner is at the faculty cottage? Just curious :) I find what institutions/cafeterias server for meals really interesting (don't ask... it was sparked by Jamie Oliver questing to make-over England's lunches...)

Sirt-- you're on an all fish kick today!

Carol :high5: I also had a great DD yesterday (check out the new #, 2lbs down (I'm hoping that's real... I did weigh 3x just to be sure!)

I need to *plan* for the rest of the day, but it's just 1 meal and maybe a snack left to figure out:

B: um... slept through it. shhh.

L: water, vitamins
2 slices wheat bread (170)
2 slices Emmental cheese (120)
1 can white tuna, drained (170)
1T regular mayo (must use it up and then buy light) (90)
black olives (50)
-------------
tuna melt-- priceless! :yummy:

D: not a clue...

I am feeling full of energy again today! :jumpjoy: No caffeine or anything!

Soren, I meant to say dinner (supper) will be from here (faculty cottage)--it is a small house that was designed to look like the original homestead of the owner of this land--and it is used as a place for faculty to eat lunch (away from the cafeteria), with a couple of bedrooms for special guests, a large(r) dining room and a bar. I just went and picked up two plates to bring home for bf's and my dinner. :) It's really cheap, and all you can eat (or fit into a take away plate). ;) It's usually pretty classic southern food. :) Unfortunately (or fortunately), the only dessert they had left was some cookies and one piece of potato pie. I took the pie and a pile of cookies. :D

Thanks Cindy :) I figured that, but wondered, maybe they have Atkins meals set aside for you :confused:

I think your post affected my subconscious... I read it, but didn't read read it... and then went to the store and bought collard greens! :up:

I've got them bubbling away with: 4 slices bacon, about 3/4 of a red onion, 1 whole red bell pepper, some chicken stock and water, s&p, and a bit of red pepper flakes.

OMG I"M SO EXCITED FOR DINNER :jumpjoy: :jumpjoy:
also got pork chops. :yummy:

Yummy! I'm excited for dinner too. You could pretend it's New Year's Day already. Pork and collards, and black eyed peas (I'm only missing the pork!) are supposed to be a "lucky" meal for the new year. ;)

I make them with cinnamon, and a capful of homemade vanilla. No whipped cream for me right now, as I am saving up my dairy for a test day next week. :( But they were still delicious.

re: fried bananas. I actually like very ripe (very-- like, black on the outside) plantains, more than bananas. I think they taste banana-ier, if that's possible. And not mushy when you fry them. I try to only eat these when we go to carribean/Mexican/Cuban places, b/c if I kept them in the house, I'd get fat.

I ended the day yesterday right on track-- pork chops, ALL THE COLLARDS (made 2 small bunches, and must've eating 2/3 of the whole thing!), and even had some more mini chocolate bars.

Logged it all in my tracker app, and I was still ok on calories. LOVE JUDDD!!!
