UD Friday: Plans?

Hi everyone! Happy Friday!

pre-workout - banana
pre-breakfast snack (lol) - iced coffee w/ almond milk, 100 cals of almonds
B - ff vanilla greek yog w/ sliced almonds, raw oats, shredded coconut
L - salmon salad sandwich, veggies, apple
D - not sure yet.

Aiming for 2125 again since going by calculator numbers that include exercise might be working for me. I had a nice loss but it could be coincidence. Time will tell!

Have a great UD!

L: Banh Mi with Sriracha (320)
D: We'll see . . .

Keira's old school is doing "Lawn Chair Theater" tonight. They have food vendors from 6:00 until 7:30 when the movie starts. The problem is that my back is really, really hurting today. I don't know if I can sit on the grass for 2 hours. My plan is to try to convince Keira that she'll have just as much fun going for dinner and hanging out with her old friends as she would if she stayed for the movie (Ramona and Beezus, which she's already seen a couple of times). Anyway, dinner will be whatever's available there, most likely hot dogs or pizza or nachos.

Dawn, I'm sorry you're back is giving you problems. That's so uncomfortable! Dr Mercola has had some articles recently (one today) about back pain, and exercises to realign the spine. I haven't read the articles or watched the videos yet, but have saved them because I really do want to learn more about it. My back spasm last year really scared me, and I don't want to have that again, ever! I think what he's suggesting is called Foundation Exercises. If you look into it, let us know what you think, and I'll do the same.

Thanks, Carol. I'll look into the foundation exercises. I finally broke down and took a Vicodin (I don't usually like to take them at work, but it was warranted today) and I'm feeling a little bit better. I have a Chiro appointment after work, too, so hopefully that will help. I was feeling better yesterday and wore heels, which I'm thinking wasn't the brightest idea I've ever had. The will be relegated to the back of the closet again until I'm sure I'm better.

I ended up whipping this up for supper and it was so easy and good! I can see this being UD breakfast often (with bacon or ham lol) :

Egg and Muffin
I really wanted toast and eggs, so I had a lightbulb moment - MIM (sort of) with a butter poached egg on top!

2 large eggs
1T butter
2T Almond Flour
2T Coconut Flour
pinch of salt
2-3T water
salt and pepper for the egg, if desired

Spray a large ramiken or soup size mug lightly with cooking spray.
Beat 1 egg well, add 2T water and mix, then add the salt, almond and coconut flour.
Microwave for 2 minutes or until it's completely cooked.
Leave in the mug or turn it out, up to you.
Meanwhile heat the butter in a small skillet or melt it in an egg poacher and cook your egg to desired doneness (I like sunny side up - runny yolk )
Slide onto the cooked muffin thing, don't forget to pour the butter over, too! Dig in.

Calories: 382
Fat: 27.5g
Carbs: 12g
Fiber: 9.5g
Protein: 19.1g

If you want to make this a bigger breakfast, cool the muffin slightly, cit in half to make 2 round bases and put an egg on each (70 cal, 6g protein more for an additional large egg).
