Planning to fry the chicken thighs tonight in coconut oil, and serve over grits made with chicken broth and cream cheese...also will saute onions and mushrooms w/diced potatoes (all mixed with chicken to top the grits), finished with a light gravy. I didn't have time to eat lunch, so my mouth is watering thinking about this dish tonight. I hope I can do it justice. I've only had it at a restaurant before.

seen in one year. They are taking us to restaurant in Laguna Beach
called Mozambique. Not familiar with it at all.
Only thing I see to do is eat a small amount of everything.

Any advice would be appreciated.

First, I'm jealous! Would love to try this food.

Secondly, it looks like it shouldn't be too terribly caloric, so if you just have small amounts of rice and bread/dough, the rest will probably be fine. I'd just go, enjoy, try everything, and report back to DAWN!

Everyone may come to dinner tonight! I hope it turns out well. I got a late start, and am trying to decide what to cook when, lol. I just turned the oven on 200, to put the chicken and mushrooms (to keep warm, after I finish cooking them) in while I cook the potatoes and grits. I'll do the gravy in a separate small pot.

Barb, your dinner sounds adventurous and delicious too! Report back.

If you've never had grits, but have had polenta, the taste is similar.

Back from Mozambique Restaurant

Oh my goodness this was so much fun. First to explore the place
and then the menu. We had plenty time visiting and had a table
9. Everyone seemed to select something different.
Since they had small plates (which is so nice) I started it out with
their Mediterranean salad, which was varied greens, hard boiled egg,
Greek olives, feta cheese, caramelized onions, tomato jam, and a
delicious Greek dressing. It also had croutons of some kind. I loved
my salad and I didn't think it was very small. My entrée, also a small
plate was some kind of sausage with an unusual taste, some kind of
African salsa, the sausage had a molasses like drizzle underneath,
some crispy stuff on the top, fresh asparagus drizzled in evoo,
and wonderful mashed potatoes. It was yummy. We will go back
and sample some other goodies.

Was careful not to eat too much. I think I had a very good UP day
in spite of eating out twice. Looking forward to DD tomorrow
