UD Wednesday, what's on the menu?
Having coffee and cake with my mother early, so I'll stay low-carb the rest of the day:
B: coffee w/heavy cream
mid-morning: small piece of cake and coffee
D: pan seared tilapia (butter, capers, parsley, garlic); romaine salad w/Italian dressing
S: josh rogan curry over riced cauliflower

I know I am having sashimi for lunch, but not sure what the rest of the day is going to look like. There's one last pork chop in the fridge, and some greens, so that might be breakfast, but first I need to go out and do some yard work.

L: Half a salami sandwich with mustard on sourdough bread, 1 piece homemade beef jerky

D: DH says we're going out to Mexican food tonight. I'll probably have carnitas, with beans but no rice, and a Corona Light beer!

For lunch I had vanilla (greek) yogurt, and a mango. Yummy!

I'm going to make chicken/avocado enchilladas for dinner... :)

L: Yellow fin tuna on Whole wheat delis select, chobani flip yogurt, and seedless grapes
D: Unsure, but hopefully something good. I've got a good 1200 calories open.

My mundane menu . . .

B: Everything bagel, cream cheese, coffee, iced tea (355)
L: Large Wendy's chili with TJ's habanero sauce (270)
D: Leftover roasted chicken, watermelon, grapes, pineapple, maybe some cottage cheese.

I've been a fruit kick lately. I usually prefer veggies over fruit, but I've been craving watermelon and grapes especially. :confused:

I tried a new beer last night and liked it. It's Black Butte Porter. I might have another one of those tonight, but they are NOT a calorie bargain at nearly 200 calories per 12 oz bottle. :eek:

S: oatmeal w/ cranberries, coffee
D: burger on WW bread, veggies

Maybe some air popped popcorn later...

My enchiladas are in the oven, and boy do they look delicious! They have avocado chunks inside the tortilla with the chicken and shredded cheese, then a sauce of garlic, salsa and sour cream (w/cilantro and spices)...poured on the bottom under them, and over the top and additional cheese. I'm so glad I only had yogurt for lunch! :D
