Anybody have a good pina colada recipe?

I have a craving. :D I wanted to make some tonight and was going to use Coco Lopez and pineapple (and rum ;)), rather than buying lots of ingredients. However, when I looked at the calories, I realized each drink was going to be about 500 calories. So, no going to the islands in my mind tonight! I want a simple recipe that's good...splenda's fine. :)

KeirasMom 07-25-2013 03:50 PM

No help from me. My recipes usually involve walking up to the bartender and ordering. ;) I'm interested to see if you get any simple, yummy suggestions though!

LoCarbGal 07-25-2013 03:52 PM

I've never met a low cal pina colada recipe myself, but it sure does sound good. Let us know if you figure it out!

Librarygirl 07-25-2013 03:54 PM

Well, maybe not low, low calorie, but that coco lopez was 262 calories for 2 oz. :D That's not including the pineapple and rum.

KeirasMom 07-25-2013 03:56 PM

Rum and diet coconut/pineapple soda? That's about as creative as I can get.

And a touch of HWC for consistency? Hey, we may have just come up with something!

Librarygirl 07-25-2013 04:21 PM

Um, Idk. I could use coconut milk, the real stuff for about 450 for a whole can. A couple ounces of pineapple (with blended chunks), and splenda...all mixed with ice in a blender...

Familyvet 07-25-2013 08:12 PM

Well.....?

Seabreezes 07-25-2013 09:25 PM

There was a WW Mai tai recipe that used rum extract, orange extract and ine apple extract. You could do something similar with pineapple and coconut extracts or DaVinci pineapple and coconut syrups. I'd mix them in coconut milk from the diary case -45 calories and a shot of rum.

If you google low cal piņa colada recipes there are several on the net.

Have fun!

Drinking is the ONE fattening thing I dont do!!!! I always say, I dont drink because if I drank as much as I eat, I would not be able to function! The coco loco sounds delicious though.

Librarygirl 07-26-2013 07:42 AM

I guess if I'm going to have a Pina Colada, I'll just do the real thing. Probably would only have one or two anyway...

I didn't have the ingredients on hand, it was just a thought when I do decide to have one/make one. Possibly at a friend's house over the weekend. :)

Dasani makes a coconut pineapple drink concentrate (those little squeeze bottles). I got it at walmart, it's very good:)

pooticus 07-26-2013 08:41 AM

I would use the following if an UD--but keep it lower carb cuz that's how I roll:

If I were gonna concoct one, this would be my starting recipe:

12 ounces water
6 ounces coconut milk, Premium, Thai Kitchen (about 1/2 can)
6 ounces coconut milk, So Delicious brand, unsweetened vanilla
1/8 teaspoon pineapple extract
flavor drops with sweetener, Dasani, coconut pineapple flavor to taste
1/2 to 1 teaspoon glucomannan
ice

Garnish: Optional
1/4 cup pineapple, whole, sliced into a thin wedge with rind

Per 1/4 of the recipe: 102 Calories; 9g Fat (70.4% calories from fat); 1g Protein; 7g Carbohydrate; 2g Dietary Fiber; 4mg Cholesterol; 16mg Sodium; 5g Net Carbs

Forgot to add the rum! Add dark rum to preference (usually 1 1/2 ounces per serving)...so you may be able to back off on the water by 1/2.)

Librarygirl 07-26-2013 09:00 AM

That sounds good! :)

Kismet311 07-26-2013 09:05 AM

I just use a bottle of pina colada mix. It's a "skinny" one so it's only 40 calories per serving plus the rum.

Librarygirl 07-26-2013 09:25 AM

I also have read (just now) about using coconut flavored rum, with regular cream and pineapple.:yummy: Making me wish it was a UD.:p The ones I used to like (in my 20s when calories were not thought about) were made with the *addition* of vanilla ice cream! :D

jrudq 07-26-2013 03:31 PM

It isn't a pina colada, but it hits the mark pretty dang closely:

Malibu Rum - or any coconut rum
Rum
Pineapple Coconut Sparkling Ice Water
Lime

It isn't creamy, but the only cals are from the Rum itself...

This is what I would do. I actually have a can of the coconut cream in my cupboard, that I bought with the intention of making homemade pina coladas. I love them but have one like once a year. Still haven't gotten around to making it. Would be a fun thing to have w/ company. Yum.

Natalia 07-27-2013 06:18 PM

Do you have Orange Julius?
They make piņa colada smoothies.
The small is under 100 calories.
You could get a larger size and have a couple portions of piņa colada smoothies!
I have tried it before LC and the flavor was good!

I use that too. Throw it in the vitamix with lots of ice and rum. Love it. I find the skinny mix at home goods or if you have them near you, Christmas Tree Shoppe

Kismet311 07-28-2013 05:06 AM

Yup, I got it at the Christmas tree shop but I also found a few different ones like margaritas at the grocery store. Sometimes I add a bit of canned pineapple too and it doesn't add too many calories as long as you don't get the pineapple in syrup.

Oh wow! I have a DQ right around the corner that I've been avoiding very carefully, but that sounds great! They have all different flavors and a small would be a do-able amount of calories. I get 160 calories for a small, but it includes the syrup, pineapple chunks etc. I might even add a little rum!

Natalia 07-28-2013 03:48 PM

They have a "light" base that doesn't have yogurt.
It's still pretty good, though :)

Does have HFCS if that's a trigger for you.

Librarygirl 08-08-2013 05:27 PM

I bought some good coconut vodka and made a variation of the Gimlet, LCG is so fond of. :) Add a splash of HWC to the shaker with ice, coconut vodka and Rose's lime juice.:yummy:

Barbo 08-08-2013 08:58 PM

I don't have a recipe but..

just an idea.

Freeze coconut milk cubes, plus some sugar free pineapple chunks.
Throw it all in Vita Mixer or whatever and get it all creamy frozen.
Right at the end put in your liquor and pulse, then last minute a tbs.
HWC. Everything is concentrated and not watered down. Oh and of course
having pineapple and coconut flavorings will help as well.

allisonm 08-09-2013 09:12 AM

Just to add another idea to the mix - you could replace the coco lopez with coconut water and sweetener.

Librarygirl 08-12-2013 03:19 PM

Nah, coconut water is too watery. :D ;)

allisonm 08-12-2013 04:12 PM

Yeah, it would be watery. I don't get the HWC thing - it's the wrong flavor. Coconut milk sounds like a good choice to me.
