Thank you for the tip, and also for the suggestion of adding cocoa. That sounds yummy! Not sure about chocolate watermelon but...
I've got a few slices left, I should take a photo of the cut cake as its pretty attractive. The color combo is nice.

Jen, you can add any kind of flavor and it will take on that taste. I haven't tried strawberry yet, but I bet it would be wonderful!!!! Here's a recipe for strawberry coconut cream frosting (or mousse, depending how many strawberries and/or liquid you add):

  • 1 13.5oz can full-fat coconut milk (open the can (DO NOT SHAKE) and store in the fridge for 4+ hours, or overnight)
  • 2-4 strawberries (more will yield a thinner mousse)
  • 1/4 tsp pure vanilla extract
  • pinch pure stevia, or 2 tbsp powdered sugar
  • tiny pinch salt
Scoop out the coconut cream. It will be very thick! Leave the watery bit in the can or save. Adding a little to the cream may make it easier to whip...blend in the other ingredients and that's it! The frosting will get thicker in the refrigerator.
