So I'm already at a healthy weight although I could stand to lose 15 pounds. Except to make sure I retain any muscle I can, I lift weights and 520 of my calories are already from pure protein. But my down days are calculated as 340, and my up days as 1700. Even if I were to follow the typical 500 down days, I still can't imagine netting any less than 700 because of all the protein and other foods, though! Has anyone skipped induction and done well?
And this is probably seriously deviating from JUDDD, but:
what are your thoughts were I to eat 700 on down days and then take away the extra calories on up days, so they'd be at 1340-1500?

The benefits of JUDDD come from the SIRT activation. The plan you outlined does not, IMO, have enough of a swing for your body to start producing SIRTs. It would simply be a low cal diet. The JUDDD magic comes from the swing. Why put yourself through the trouble of a DD without the benefits?
There are several good explanations on the boards & in the stickys of how & why JUDDD works. Especially anything posted by Nancy (Gotsomeold). It's valuable to spend some time reading the why in helping to implement the how.

I suggest you begin by eating 700 cal/DDs and 1700 cal UDs. The 700 cal will get you below RMR and should activate SIRT1 on DD. On UD you have to eat enough to turn off SIRT1 or, as Yennie says, you are just doing another low-cal diet.
Skipping JUDDD induction and jumping in with both feet is fine. Many of us begin above or below 500 cal/DDs. Many of us start at 500 and stay there - losing steadily - for months.
On Dr J's website, enter your info and try the different exercise levels/weight loss percentages. If 700 calories shows up as maintenance over and over, you may eventually want to tune your DD calories down a bit. But, starting at 700 (as long as UDs remain well above your RMR) should be a great beginning.

JUDDD cares about calories. JUDDD does not care what you eat. Your body probably does.
Combining JUDDD rotations with PHD foods got me to goal with greatly improved health (and a drive to boogie-boogie-boogie all night long).

I'm not 100% sure that SIRT1 will be activated with out the 2 weeks of 500 or less. The spread is critical, but I think there has been some research that the 500 number is pretty important to really get the SIRTs flowing. There are so many wonderful benefits from being SIRT1 saturated, but you can give it a try and see if you feel the magic without having to go down to 500. I know there are a couple people that never have really low down days, but I don't know whether they did the 2 week induction first.

This question is hard to answer. Dr. Johnson does say it's "important" to keep your calories at 500 or less for the first to weeks to activate SIRT, but it's possible that he meant "to activate it quickly." In the book he describes it like water dripping into a bucket ... you fill the bucket and then it keeps replenishing with each fasting period.

Lots of us were afraid of 500 calories before we started ... it was unimaginable! The first couple might be a little harder, but it only gets easier. So just decide how fast you want to fill up your SIRT bucket ... if you want to try 500 calories every other day for two weeks, you could eat it all in protein if you want and save some protein calories for after your workout. Most of us don't have problems with exercising on down days.
Also, you are right, if you want to do JUDDD it's not a good idea to add calories on to your DD and take away from the UD.
