potato dd question

I believe I have read somewhere that for the potatoes not to spike your sugar,you need to eat them cold. I notice alot of you eat them hot.Is is because you are just counting calories on a DD and don't care about the carbs?

I'll be interested to see the responses. I'm most of the way through day 9 of a potato hack (although mine has also had rice on 2 days since day 5 as I'd developed a rash etc.).

Sometime this year there should be a peer-reviewed article published on the potato hack. Until then, the physiology of the PH isn't at all clear to me. Other people will know a lot more but it seems there are three strands.

1 Eat cold potato for the resistant starch and because in the absence of fat and other interesting flavour enhancers, it's jolly tricky to eat many of them (well, it is for me).

2 Eat hot potato at some times to create a blood sugar surge which needs to be cleared by insulin.

3 Related to both of the above: the issue of resistant starch altering the microbiome/bacteria population in the lower gut to facilitate the production of shortchain fatty acids (SFA). In the absence of exogenous fat (ie, fat that you've eaten), it's thought that the body will mobilise these SFA and its own fat stores to produce the insulin to clear the blood sugar spike.

Cold rice has some resistant starch and overcooked white rice (eg, in congee) is reported to have a high GI so should produce a corresponding blood sugar reading. Rice doesn't have the same nutritional density as the potato, but it does have other useful properties.

I tend to eat cold potato on a DD but one of the meals is hot (today the snacks were as well); on an UD, the breakfast is usually cold starch but the other meals are hot although my snacks are cold.

My understanding so far, which may be completely offbeam.

On my potato DD's MOST of my potaoes are eaten cold. I boil a bunch of little Yukon golds and keep them in the frig. Cold seem to satisfy me whereas hot does not. The only time I have hot is if I make potato soup of microwave potato chips. And I think the gluc in the potato soup is what satisifes me. (makes me feel full)

How many calories of potatoes are you eating on DDs, those of you who have had success with just eating potatoes on DDs. By success, I mean losing weight.

I got the "recipe" off here somewhere but can't find it so here goes.

I think the OP used parchment paper but I have been using a silpat sheet.
Slice thin. I do not have a mandolin so my slices do vary in thickness. I don't even peel them. I scrub the skin really good, slice and then lay the slices on the silpat in a single layer. The OP I think said to microwave 1 1/2 minutes on each side but mine take a lot longer. I do the first side at 4 mintues. Wait a few minutes so I don't burn my fingers and flip them over. I set the microwave for 6 minutes and start watching at 4 minutes. They will start to turn brown. Do not let them get oo brown or they taste burned. They are really crispy. Sometimes I salt them before I cook and sometimes after. A little Hunts no fructose ketchup and life is good. My microwave may be a low voltage or whatever one and takes longer so you might want to experiment to see how fast your microwave cooks. Or maybe they cook faster on parchment paper.

I have done them both ways. Currently I am experimenting with maintaining by eating all of the potatoes I want on DD's and my weight is staying steady and in fact went down a pound this week. I eat mostly cold boiled gold potatoes along with one meal of microwave potato chips and ketchup. It is making my DD's very enjoyable. That said, I had two whole UD's where I only went over my calorie numbers by a 200 calories. I am usually way over that.

Thank you! I tried ouiz's recipe for "potato chips" and the time was not nearly long enough. I ate them but they were far from crisp. I'll try what you recommend! I can't find SF ketchup in the store...

I'm no where near an expert on this, but I believe someone said that the hot/cold debate was really only if you felt you would have a blood sugar issue with potatoes. I believe they don't raise the blood sugar as much when cold? Calorie and weight loss wise, it doesn't seem to matter. I may be totally off base and usually am so take that with a grain of salt

I am not using the sugar free ketchup just the fructose free one. Hunt's has a good one but it has sugar but no high fructose corn syrup in it. My local stores no longer carry the SF ketchup so I switched to Hunt's. Gotta work with what I can find in my local stores.

I found a simple recipe for SF ketchup and I have all the ingredients, so I guess I could do that. Basically, tomato paste, cider vinegar, s&p, garlic, splenda...

Some people say that they satisfy their appetite more, cold. I ate some on my last DD cold with a diced egg and mustard and it did fill me up for hours.

Ok...so I'm trying to read through the other Potato Hack thread but I am soooo tired and ready for sleep that I cannot go through all of the comments. Can someone just break down the basics of the Potato dd hack? I'd be interested in trying this out to alleviate some hunger and possibly lose more weight.

Questions:
How many calories of potatoes can you eat? (some say it doesn't matter/some day it does...hence the confusion lol)
Can you use any condiment as long as it has no fat? Like ff sour cream/cheese/etc...I noticed someone mentioned salsa con queso....that has minimal fat so does that matter?
Can you combine it with sauteed onions/peppers/etc? What are the basic rules?

Oh! And can I have my coffee with ff creamer and sf cocoa?

I would not be trying a potato hack if I had just started JUDDD. I do it because I am in maintenance and experimenting. Your choice, but tweaking too early may not bring the expected results. Said in the most supportive manner.

I agree with you Adi. I tried it in the beginning and it didn't work well for me. I was starving all day. I feel much more able to do it now. Give it a couple of months at least.

Just FWIW--
Potatoes have the highest amount of resistant starch (RS) when they're raw.
(So if you don't hate raw potato, you could nibble on a little slice or two while you're peeling/chopping/prepping.)
(Although, I have known people who like to eat a raw potato like an apple!)

When you cook them, the resistant starch "disappears".

As they cool down, the RS forms again.
But--it's a smaller percentage than when it was raw.

If you re-heat the potato, the RS "disappears" again.

Cold potatoes might be more filling because of the RS being higher than in hot potatoes, or maybe they take longer to digest or affect blood sugar slightly differently...there doesn't seem to be a consensus!

I read that about the raw potatoes and I have been trying to eat one slice raw when I make microwave potato chips. A little salt helps but not a big fan yet of the raw. But I am trying.

Yikes! Raw!! Not sure I can do that...
Earlier question about counting cals for PDDs - I don't as long as I'm being super strict & doing only potatoes. But I do keep mental track because if I add something else in at dinner, like tonight's leftover pork roast, I no longer consider the day a potato hack & count all the cals. Probably making it harder than I need to but that's how I do it.

Well, once again my potato day has been thwarted. I pulled my bag out of the pantry and they have rotted. I just ate some of them last week, but I did have the bag about a month. Next DD!

Funny. That has happened to me in the past when I rarely ate potatoes.
I buy the Yukon golds and go home and cook them all and keep in the frig. My last two bags have been really small ones which I love. I don't think anything can smell worse than a rotten potato though.

I've had my ups and downs trying to do the potato days ..I will probably try it again on a dd sometime later...Cindy..I did make that sf ketchup from the tomato paste, and I really like it..I got one of those lovely red restaraunt bottles.

Thanks for the info ladies..I'm not going to do one anytime soon, especially since I just started. I was just SO hungry yesterday that I was desperately looking for ways to alleviate some of the hunger pains haha. I'll possibly try it out in a few months or during maintenance. I woke at 2am yesterday and could not get back to sleep so that extended my dd by about 5 hours...ugh! I did manage to come in right around 500 though..maybe a bit over or under...not sure. Was too tired to care. :-0
