UD Friday - plans!

I couldn't think of anything clever

My plan today is I'm getting together with a couple friends later, for girls/pizza night.
I'm going to make the cauliflower pizza crust, b/c even with the cheese in it, it's still way lower cal (and carb) than other options, and I want to keep my mojo going!

B: not sure, if anything. Maybe more TEA!!!

L: probably tuna on salad

D: cauliflower pizza skin (I think the original site was your lighter side? also, that's cleochatra, on this site), with pesto, spinach, artichokes, lite feta, chicken, spinach, and mozz. Something like 1000 cals
maybe a glass of red wine, 125

without breakfast, I'm at about 1900... I'm going to work to stay in my 2100 range today

first of all, Soren that pizza sounds wonderful!! Is that crust a pain to make?

Breakfast-coffee w/cream, 1 Samoa cookie, 1/2 apple=155 cals

Lunch-Pei-Wei. Have no idea what to get. I do know that whatever I do get, half will be going immediately into a take out box, and I will have the rest for dinner. Each of their entrees is TWO servings(and double calories )

Sher-- what's pei wei? I swear, first Dawn, and now you! I thought I knew everything about food!!!! LOL

Let me find the link for you for the pizza crust-- it's not hard to make, just a few steps, so I wind up making a bunch at once, and the baked skins actually freeze really well (they're about the size of a large ziptop bag, so that works out).

My tip? use parchment paper to bake them on, b/c they stick to the pan like mental. but with parchment, no issue. You can use it between the skins when you freeze also.

Oh, apparently, it might be a sticky!

mmmmm, will be making that. My son is doing Paleo now, and it gets quite...boring, we run out of ideas.

Pei Wei is a chain casual dining restaurant, it's parent restaurant is PF Changs(which in my opinion is much better). Pei Wei has Korean, Thai, Vietnamese dishes. I usually get the pad thai.

L: Beef Stroganoff
D: Roast beef, roasted cauliflower and brussel sprouts
D: I have some cream cheese that's about at its date limit, so I'm thinking I need to make a cheesecake. Oh the sacrifices we make. I also have some walnuts, so maybe I'll make them into a crust.

Ok, so, DH just came home. Got laid off.
After a really hard year at this place, and just 1 yr, as this is his 3rd lay off in 3yrs.
He just finished an insane schedule of yearly reviews, and his wasn't done by his boss... go figure

Anyway, I'm not going to stress eat. But I do need to vent. sigh.

Oh (((Soren))) I'm so sorry! Vent away gf, layoffs are so stressful! BTDT w/ my DH and the constant work stress is horrible on everyone. HUGE hugs to you both!!!!

I've actually put his resume in 2x with my company... once to do something similar to what I used to do, and recently, randomly (i.e. no opening, just wanted them to have it) in what he actually does, which is IT Director. I'd love for him to work where I work, since I love my company but I guess we'll see what's out there.

We're going to focus on quality of the job and company, and not rush into taking just anything-- that's how he got in this mess in the first place. He had another potential job a year ago, but it was FAR (like 1hr+ each way, driving) and we agreed he shouldn't take that. But it would've been a good company in the end... so this time, we're going to weigh good company over closeness, kwim?
We can always move closer to the company, if it works out.

Anyhoo--fingers crossed and wood knocked, please, people!

I'm so sorry, Soren. Layoffs are awful. I've been through it. You just feel like you were thrown away. Mine was a blessing in the end - it was a really unhappy job, and I'm much happier and healthier not being there. I hope for the same for DH and you!

Thus far I've had 1 scrm egg, 4 sl turkey bacon, 1 sl whole wheat toast w/sf strawberry jam and 1 Tbsp crm cheese.= 250 cal

L - Not sure
D - Not sure (would like something that involved grease! lol)

Sorry for the job loss Soren. Hopefully, where one door closes a better one opens.

JM- i tried to tell you on another thread, but wanted to make sure you see it just in case you didn't, that I ived in nashville from age 4 to age 9. I was wondering if you live anywhere close to there? I really miss it-i haven't been back since around 1981. Want to visit again, so many wonderful memories there!

lunch ended up being pei wei black pepper chicken combo with steamed rice-I ate the whole thing since it was only one serving-870 calories. So far I am at 1100.

Oh ok. Sorry I missed it. I'm a little on the ADD side so I sometimes have a hard time tracking my post even if I go back to the user control panel Anyway, We live just across the TN/AL line in fayetteville. Grew up in Huntsville, Al. But we jumped the line when I started teaching in Tenn. I do love it here, however, I miss the S. Texas winters. It is pretty cold here and suppose to be getting some snow here as well. Love Nashville, hate the traffic I've driven in Houston, Dallas, New Orleans, and nothing has quite compared. lol I love the Tennessee landscape don't you? The only other states I've seen that has such pretty, lush hills are Hawaii and Pennsylvania. It's way too cold for my liking in PA. though. Hawaii I could totally deal with. lol **Side Note**= Now totaling about 900 cals after lunch.

yep-love the landscape. We camped in the smokies frequently, and we had year round passes to opryland. I miss it badly, mostly because of the time I spent growing up there with my younger brother. Those were the days.

Thanks, you guys are the bestest! And I'm sorry for others who are dealing with this same thing, themselves or their Ds...

I've been with my company 8ys in April... so he's sort of envious of me. Sigh.

He's not eaten anything yet today but some dehydrated zucchini... I'm doing ok on food, and preparing the cauliflower pizza crusts for tonight with the girls (which I can't cancel on, long story, hard to arrange just 3 schedules, etc), and one for DH since, well, he'll be home instead of running the stupid office move

Yeah, I loved Opryland. Can't believe they closed it. Its now Opry Mills Hotel and some kind of shopping plaza. We like Pigon Forge/Dollywood too. Don't know if I spelled that correctly, but you know what I mean.

Really bummed Totally blew the up day out of the water. I over did it by about 640. Did great until we went to Shoney's and I didn't think I did too bad because of what "I thought" was not to bad but turns out the stuff I chose had more calories than what I thought. Of course, I ate half a hot fudge cake so that was 450 of it. But just feel real disappointed in myself.

Dinner 2 chicken soft tacos fresco and black beans and rice from taco bell-550
Yogurt covered rasins-i think around 250.
So 1900 for the day, went over :/

So end of the weird day yesterday-- didn't eat my whole pizza, maybe 1/2.

but did have 2 glasses of red wine, and some full fat/sugar icecream (with oatmeal cookie crumbles on top, etc).

From what I can tell, I still came enough within range that I'm not worrying about it.

Onward and downward.

Good going, Soren. I know you had a lot on your mind last night. I hope you were able to have fun with the girls.

My UD was right on track through dinner. Felt satisfied. Got home late, and decided some wine was in order. Two glasses later, with a few Dove chocolates for good measure, and I was feeling pretty good. I think there's a little demon on my shoulder lately urging me to see how far I can go on UDs and still lose well. Maybe it's actually an angel. If I CAN eat more, maybe I can keep my metabolism up longer. We shall see....
