Baked Potato Skins- Cheesy Bacon-y Down Day Deliciousness

FABULOUS LUNCH this Down Day!

Get one of your cold pre-baked potatoes out of your refrigerator.

Weigh out a potato. Keep trimming it down until it is 4 ounces. Mine ended up being sort of a rectangular block of cold baked potato.

Slice into four quarter-inch (or so) slabs. Sprinkle the potato slabs with a little salt.

Spread 1/2 wedge of Aldi's lite cheese onto each slab of potato. (I use Aldi's because it's only 25 calories per wedge.)

Arrange the four cheese-spread baked potato slabs with sides touching on a baking sheet.

Sprinkle over with .4 oz of shredded cheddar cheese.

Place under your oven's broiler until the cheese is bubbling and browning just slightly.

Take out and sprinkle over with some chopped green onion tops and crumbled up well- cooked bacon from a single slice.

Return beneath the broiler until it's all looking perfect.

Enjoy your Down Day lunch. ****** says 241 calories for the quantity of ingredients I used.

How can this be a DD? I'm comfortably full and satisfied, my taste buds are thanking me profusely, and I'm one happy JUDDD BUDDD!!!!!

wow, those look yummy! And I have the Aldi cheese spread...I really need a scale so I can start weighing ounces. Might have to make a trip to Meijer this afternoon

You really do need to get a scale. Weighing out food portions is SO much easier and faster than measuring with cups and spoons.

And now that I've made these today, I know forevermore how much of each ingredient to use, and what the calorie total ends up being. So yet another meal that I *don't have to count calories*... or carbs either!

Wow that does look good and so decadent for a DD day. I'll have to find some Aldi's. I only have sharp cheddar which would really add to the calories.

And yes, the scale is key. I was so proud of myself last night--cut what I thought was 14g/1 T of butter and threw it on the scale to quiz myself. I totally aced the test. LOL

After having spent so many years of life fixing meals, baking, etc. I'm pretty good at eyeballing quantities, such as a tablespoon of something or 3/4 cup of an ingredient. But when it comes to estimating the weight of something.. like how many ounces is this raw peeled carrot?.. I'm not so good.

I love the little scale I use so much. It's saved me so much time and figuring, but more importantly, it's saved me from guesstimating.

They look yummy! I don't think they would re-heat as nicely in the microwave at work, but I'll try them on a weekend DD one of these next weekends. But I'll have them as a super decadent DD bedtime snack. I don't want to ruin my DD energy with that level of yumminess!

YUM!!

Totally with you on how valuable having a scale is. I scare myself sometimes with how accurately I can measure by eyeball (got to get a life) but there is just no way to really know how much that chunk of chicken weighs - too many variables in the cooking technique and the fat/water content.

That looks great. When I finish my potato diet phase I will try this.
AND I have a very cheap battery powered scale I got at Wal-Mart years ago that I keep on my island. I weigh everything. I also have a very old metal postal scale that I used to use and loved it too.

My 'kitchen' scale is actually a postal scale too. I like that it has a larger flat platform to put stuff on for weighing, and I can set a larger bowl on there too if I want to weigh out a large amount of something.

And I kind of like the little weigh that I have to move to get it just so. Mine is a really old back in the day balance type scale.

That's funny.. it made me think of all the OLD things I have around here that have a lot fewer bells and whistles, a lot less shine, than the newer models, but that are still going strong. And then I hear about how the newer stuff doesn't last many years, and I'm glad.

My washer and dryer and refrigerator are all over 20 years old and going strong. I still have my old original Kitchen Aid platform mixer with bowls, etc.... almost half a century of use, and still working just fine. I was just sick when my old toaster finally gave up the ghost a few years ago, and sure enough.. I'm on my second one since then and it now only toasts on one side and a handle is working 'funny'. I'm think a new one for Christmas from Santa will be needed.

The old stuff was built to last. The new stuff is built to have a short life and then wear out or break down.
