UD Thursday ~ What's on your plate today?

B: Santa Fe turkey burger, no cheese, + jalapenos (415)
L: 1 C F&E split pea soup (130), 1 C NF Greek yogurt (120), 2" artisan French bread (130), 2 pats butter (120)
D: Pork roast in gravy (190), 1 C quinoa (160), 1 T flaxseed butter (50), 2" artisan French bread (130), 2 slices braunschweiger (120)
Wine: 315 calories worth -- don't judge me!

I'm at 1880 calories. I may add a small Tootsie Roll just because.

L: Summer sausage and swiss cheese
S: 1/2 Honeycrisp apple (dang, those things are HUGE!)

had a small orange for breakfast and a few cups of hot water.

want split pea soup pretty badly, so that will probably be later today. I stocked up on bulk organic split peas, have carrots and onions.

Oh, I just had a super naughty big fat almond croissant and boy was it good.......
So.... if I am hungry again for lunch might have a snack or protein shake, so I can have a nice dinner and wine tonight

I don't usually post a menu but I made an awesome custard yesterday. It is a traditional Italian recipe inspired by a container of Organic Valley whole milk ricotta that needed to be used.

Google sent me to many sites but the basic recipe was the same, for the most part.

I am so impressed that I plan to add this to Christmas menu.

Ricotta Custard
1 cup ricotta
1 c 1/2 & 1/2
3 eggs
3/4 c sugar
1/2 t almond extract
1 t lemon juice

Blend it all up, pour into a greased pan and bake at 350 in a water bath for about 45 min.

My version;
I used 1/2 c HWC and 1/2 c sf Davinci's vanilla (then a splash more and a dash of stevia)
grated a little lemon rind in instead of the juice.
grated nutmeg over top.

I probably could've omitted the lemon altogether...it's such a small amt.

I think traditionally, one would sprinkle almonds on top about 10 min before cooking is completed.

This can be made w non fat dairy products and some of the reciped were such.

I had my coffee with protein and some cold roasted turkey for breakfast. I skipped lunch. Dinner was more cold roasted turkey, but this time with some regular mayo and cheese and some wine and almonds. Now I'm making a punkin custard of my own making with SF mixture, some SF maple syrup, some stevia glycerite, and some erythritol it sure smells good. I hope it tastes good. I'll find out in awhile.
