Homemade Chicken and Dumpling Soup

I just came to the realization that I can have this! I haven't made this delicious family recipe in years due to the dumplings. I am so excited that with the weather getting cold that I can make my favorite soup. DH thinks I am nuts but I can eat it for breakfast, lunch and dinner.

Plus I get to show my daughters how to make it. Another reason to love JUDDD!

Yeah for chicken & dumplings...thanks for the memory, it used to be one of my favorite dishes. AND will soon be again...

Not a family secret and not everyone likes it. It is definitely different than others I have tried but here it is:

Boil 2 quarts of water with a whole chicken and 3 chicken boullion cubes for 1 hour. Then simmer for another 2 hours.

Cut up veggies. One bag of carrots and celery. 1 small onion.

After the 2 hours is up, take out chicken and skim the fat, add veggies and salt and pepper. Take 1 cup of broth from top.
Low temp for 1 hour.

Make dumplings. Can't remember from memory but I think 2 c. flour, 1 egg , 1/2 tsp baking soda, salt and pepper and fat that was skimmed if you want and add the broth to create a good consistency. Roll out dough and cut into squares.

Turn up soup to boil and drop in dumplings. Dumplings should rise to top.
Simmer for awhile and then turn off.
This soup is always better the next day. My mom cuts up the breast meat and adds it to the soup. I don't.

This is an old polish recipe and I think it was used when funds were low.

I will look for the recipe tomorrow and change what needs to be changed.

Ever notice how kids seem to love best and remember the foods that momma and gramma made when funds were low?

Funds are low for us right now, and I'm feeling inspired to make my kid some homemade old school dinners to remember.
