How long will Shiritake noodles last in fridge?

I have never tried these noodles, but I've had a bag in my fridge for probably 2-3 months. Do you think they're still good? There's no sell-by or use-by date on the bad. I'm just a little paranoid.

I am about to eat mine which are all of that age. They are virtually impervious to age while still bagged. (Of course I am not a Doctor!)

I'm pretty sure they're still good. I'm copying and pasting the response on the FAQ section of the Miracle Noodles website, which should be similar even if you're not using their brand of noodles:

"Can the noodles be eaten after the expiration date?

Yes. The noodles do last beyond their suggested shelf life but we recommend following the date. If they have been refrigeratated and if the noodle shape is still intact, they are fine to eat for a period o 2-3 months after the date. After a period of time, the noodles dissolve back into Glucomannan powder they are made from and then can no longer be consumed."

I don't think they must ever go bad. Although they smell like they have when you first open them. What a funky smell.

I usually have a couple of aging bags of noodles in the back of my refrigerator, having got all excited about using them in some recipe for Down Days, and then growing bored with the recipe before I used up all the noodles. So they sit and wait for some future time when I think of them again.

I have a bag I've had for about 3 weeks. Anyone have a quick recipe for using them? I've been wanting to try them on a DD but haven't really seen any recipes that blow up my skirt.

I just rinsed them, chopped them a bit, threw them in a pan with some chopped chilli and a small Pak Choy also chopped up roughly. Added some readymade Thai sauce, a tiny bit of splenda, a squeeze of lime juice and finally a couple of spoonful of the Arabiata Sauce that was going on DH's pasta.

Took about 8 mins. If you enjoy spicy food it was divine.

I have occasionally wondered what I was actually swallowing with those things. I mean.. no calories.. never seems to spoil or go bad in any way.. is it even food? I really don't see how it qualifies.

I worked through a "lost" bunch of bags (in my downstairs fridge) and I think the dates were close to a YEAR past their dates.... I'm fine YMMV, and interesting that they turn back into glucomanan.

Once I learned to pan fry (dry pan) them before using, they tasted much better in whatever I was doing with them.

I read *somewhere* that unless they start to dissolve the noodles stay just fine in the fridge indefinitely. Mine have sure survived that way. I eat everything in phases...when I am on a shirataki kick they go fast.
Love them pan fried with sriracha, pb2, water, a teaspoon of peanut oil, green onions, zucchini, and wild caught frozen shrimp just barely cooked through.

Thanks everyone! You've all made me feel much better about eating them. I'm intrigued by the pan frying idea. I think I'll try that. I'm a little afraid of these little noodles. I'm afraid of the smell when you open them up. How does that not kill wanting to eat them? I'm afraid I won't get them flavored right and I'll hate them.

I guess the only solution to that is just to try them! Maybe later this week. Today's an UD, so no way I'm eating them today!
