Awesome PJ, thanks for the details!

I've got squash roasting now.

got the "cornbread" from dana carpender's first book cooling now-- that's for the stuffing.

I picked some of the crabapples, and need DH to help b/c the reddest/biggest ones are out of my reach, both from the ground AND from the edge of my porch.

And given my proclivity toward TV SitCom type life comedy-- if I get up on the railing of the porch to pick the apples, I will totally fall and break my neck, and get eaten by a squirrel or something

Ok, update-- here's where I'm at:

Prep-- cooked, mashed, chilled-- sweet potato. Ready for marshmellows and baking.
-- cooked crabapples from yard, strained, and mixed with cranberries. Ready for, um, whatever you do with cranberry sauce.
-- turkey is defrosting in spare fridge. Might move it to water bath to speed things along.
--almond/hazelnut "cornbread" is baked and ready for crumbling for stuffing.
-- squash and garlic roasted, other veggies bought, for squash soup

Banana pudding (with nilla wafers) was added to the menu last night in a fit of nostalgia
-- bought ripe bananas at 1/2 price, nilla wafers, and 2 kinds of SF pudding mix (vanilla and "white chocolate"...) will assemble with almond milk tonight and let it "meld"

To Do:
-- nuke and puree cauliflower for "mash"
-- get giblets out of turkey 1 day early, cook, and then assemble them into stuffing
-- set the table
-- cook the turkey
-- put out some cheese/pate, wine
-- OMG bake the pecan pie!

I've been emailing out my secrets all week I subscribe to Cooks Illustrated, and while I think *they* are a bit nutty, they have some good techniques, and a checklist.

But honestly, I've been doing this since I was 16. I like to challenge myself in the kitchen.
I also asked for a whack of kitchen equipment for my sweet 16-- fondue pot, marble rolling pin and board (for pastry), a set of knives.
My aunts were like "is this a sweet 16 or a wedding shower?"


News: so on FB, I'm friend's with my BFF's father in law. Seems they're going to be up in Niagara Falls this weekend! So I invited them to come (I'm about 1hr or so drive from the Falls).
Wonder if they'll show up? Would be totally weird and a hoot if they did though!

Ok-- the pecan pie is ready. I made a combination of a LC pie crust (purchased mix), Kevin PA's recipe from this site, including making my own isomalt syrup, and then I added 3+ oz of chocolate to the warm syrup, and 2T bourbon, to get a chocolate bourbon pecan pie.

Did I mention we're only 5ppl for dinner? I might have a line on 3 more people! My little cousin, who I see maybe 1x a year, her DH and his brother (who if anything like his brother, should be a hoot).

So, 8ppl maybe. That totally justifies all this food!!!

Thanks K Not too hard, just gotta get everything in one kitchen at one time.

House smell just went from sweet to savory-- got the turkey bits cooking to put in the dressing, and I just cooked a whole package (pound?) of BACON, drained, added 1 red pepper and some onion, and 1 bunch of trimmed collards.
OMG, smells smokey and meaty...

It's a DD and I've been subjected to that picture on two different forums now. I may have to hurt someone soon. Good thing I'm not a pie kind of girl. Please don't post pictures of your dressing or turkey, if you're cooking those ahead. Oh, what the heck, post them anyway. I'll drool over them today and may have to make a mini Thanksgiving meal at home tomorrow!

Cindy-- but if you come here, how will I get to have your scallops with chorizo and saffron couscous???? You are more than welcome, and you do have your own bathroom, and a TV! (damn, maybe I should become a B&B?)

ETA-- and you of course have to wear the umbrellas in your hair, otherwise I won't know who to pick up at the airport!

Ok, DAWN and other DDs, hide your eyes-- I bring you, Squash soup (with roasted garlic. This is pre-cream though, I add that tomorrow). The other picture is the collard greens braised with about 1lb of bacon, red bell pepper and onion.

I'm PEEVED, I mean, jeez, ya know?



So, first thing this morning, I get up and check my blackberry, where I see my FB notifications.

I'm FB friends with my first boyfriend from middle school/HS, and in one of his past lives (he's an interesting dude) he went to culinary school.

Here's what he wrote at like 6am this morning ( why so early?)-- please help me not kill him:


David H.-- Ever heard of fatback??? Collards with bacon??? Having lived south of the Mason-Dixon my entire life I must say I am disgusted... did we not teach you about fatback during your time in the south? No self respecting southerner uses bacon with collards... jeeze!

David H. -- PS - The first thing they teach you in culinary school is that fat=flavor!!!


Here's what I wrote back:
Soren S-K: So make up your mind-- the fat and smoke from the bacon tastes great, and the recipe I was using called for hamhock or bacon drippings, not fatback. Be nice or be deleted.

In other prep news:
table is set, DH helped and wiped everything and set the table, adjusted the candles, all that stuff.
Turkey goes in at 3pm, only needs 3hrs and 40 min for resting
during that last hour, I'll bake the stuffing, sweet potatoes, heat up the cauli, soup, and collards.

I just really, really need a shower, and I haven't a clue what to wear!

Soren, if you'd married the guy you'd have a problem. As it is -pah- just wash that man right out of your hair, put on something fabulous, and bask your way through this exceptionally accomplished magazine-cover dinner.

I just wanted to vent... I tasted the collards and they are AWESOME, and that's all I care about (and if no one eats them, MORE FOR ME!!!)

Yeah, what Kristen said about the frying pan making contact with his fatback! My DW's family is from down south, this is how this Jewish girl learned about collards and neckbones They will taste amazing and I have to say the fatback is too greasy for my taste, I love that you used bacon!
