Food obsessions

So...apparently some of us have food obsessions on JUDDD, whereby we become fixated on eating a certain food on UD's.

What is yours?

Currently I have been making this every UD (breakfast, dinner, whatever) and mixing different things in to make different flavours. I make it a little thicker than the recipe so it is more the consistency of ice cream. I usually use stevia with a little coconut sugar for sweetner and with coconut-based milk substitute.

"Healthier Wendy's Frostie" - or, as I call it, Tofu Ice Cream

Didn't have a problem but the different virus protection programs work differently.

Here ya go Carly:

Healthier Vanilla Frosty

(yields about 3 cups)

2 cups milk of choice (480g)
1 cup Morinu silken firm tofu (For all substitution notes on the recipe, see nutrition link below) (240g)
1/2 tbsp lemon juice (add extra if you actually want a lemon-flavored frosty)
1/2 tsp salt, *just* under level
1 tsp pure vanilla extract
2 tbsp xylitol or sugar (23g)
2 NuNaturals stevia packets or 1/16 tsp uncut (or omit and simply add 2 extra tbsp sugar or xylitol)
donít add any ice cubes, as this will dilute the flavor
In advance: Freeze the 2 cups of milk in ice cube trays or little dixie cups. (It might be a good idea to freeze multiple servings at once, so in the future you wonít have to wait before proceeding with the rest of the frosty recipe.) Pop the frozen milk into a blender or food processor with all other ingredients, and blend until desired consistency is reached. If your blender isnít super-strong, you might have to thaw the milk a little before blending.

A note about the milk: Silk almondmilk works well in this recipe, and Iím sure many other types of milk will be good as well, but I can only vouch for the Silk because I havenít tried the recipe with any others. Iíd probably steer clear of the less-thick milks like ricemilk; then again, who knows: maybe itíll work fine!

I looked for the Morinu Tofu on the internet and couldn't find it, looking at either Walmart or Hy-Vee. According to the Morinu website, it isn't sold anywhere in SD. I did find it though at Hy-Vee.

I am guessing you live in SD since that is where you are looking for the tofu. DH is from SD and we made a trip to his HS reunion in August. Onida area.

So far my favourite flavours are chocolate (omitting the lemon juice and adding cocoa powder and a touch of instant coffee/chicory), and strawberry (adding strawberries). A small amount of real sugar also makes a big difference. I didn't really think the plain version was very good by itself.

I just have been using any tofu that is available.

Enjoy!

Sure is. We flew into Sioux Falls when we went to the class reunion since there was also a family reunion in St. Lawrence near Miller. DH has been in Texas for 35 years. He got tired of the snow since his family bought property in Aberdeen after he graduated HS.

Since I don't eat tofu ( I have tried it) and our little local stores don't carry it, I wonder if I can sub yogurt and some gluc. Since this is a DD I can't try that until Monday evening but it looks like something I would like. I am all about experimenting with my food.
