DD Breakfast Idea

I had an awesome idea this AM - I lined my cupcake pan with tin foil, took slices of oven-roasted turkey lunchmeat (30 cal per slice) and put one slice per 'cup' - then in a bowl I mixed egg whites + laughing cow + some diced tomato & poured it into the lunchmeat 'cup' & baked at 350 until firm.. Each cup had:
1 slice of lunchmeat - 30 cal
1.5 egg whites - 25/26 cal
1/3 laughing cow - 11.7
A tablespoon or so of tomato - smidge of calories, don't even know how you'd measure this..

Anyway, it was delicious and filling and savory and YUM for about 70 calories, plus I have breakfast already made up for a few more down-days! YAY!
I did take pictures, but haven't pulled them off my camera yet.

I make little quiches this way and microwave works great too!

You can make them fancy by using proscuitto too. Goat cheese, bruschetta topping, whatever. You can just fill the little cups with anything!

Great idea. I've been eating 2 egg beater omelets stuffed with one laughing cow wedge for a few days now, so variation is fun.

I've done something similar, with diced ham. Put the diced ham and veggies in the cups, then pour over the egg mixture. Bake. Reheats nicely in the microwave. Very easy to take in to work for brekkie.

The other day I made zucchini fritters. Grated summer squash, sprinkled with salt, let to drain 30 minutes, then squeezed out. Added cottage cheese, parmesan cheese, herbs, some almond meal, and a couple of eggs. Fried as "pancakes" in olive oil. One is about 100 calories, and very tasty reheated. Great, easy start to the day.
