Yay! An Up Day!

Woke up super hungry today, so let's see if I can keep it together.

B. Two egg omelette stuffed w American Cheese, Laughing Cow Lite French Onion, and Arugula stir-fried in coconut oil + 2 Dr. Praeger's Broccoli Potato Pancakes + 3 strips of bacon (500 cal)
L. A Boca Burger w/ all the fixings (what's with my burger obsession?!)
D. Might be take-out since I forgot to thaw the pork chops

P.S. Adi--I love how consistent your breakfasts are.

Business lunch meeting including a Cosi chicken, mozzarella and basil sandwich (not huge), salad w blue cheese and cranberries and dressing, a few small wedges of flat bread and one cookie - no clue on calories? The Cosi nutritional info is no help at all. Gonna count it as 1000 cals and move on. Glad I skipped breakfast! Not sure about dinner.

B- 2 slices bacon, 2 eggs fried in the bacon grease, 1/4 C cheese and 1 Tbsp HWC, 1/2 C oatmeal w/ splenda, cinnemon and Walden Farms pancake syrup (I woke up starving, lol)
L- salmon sandwich with cabbage slaw (actually a DD recipe but I didn't have the low cal ingredients, so I made it an UD meal)
S- Sauced and simmered chicken (Hungry Girl recipe but sounds yummy for UD dinner)

I will see where my calorie count is later for dessert.

What can I say? The laying hens are on super egg production mode. Of course, I have to admit I have 40 hens so that is somewhere between 2 and 3 dozen eggs a day for two of us. And the weenie dog.
