In Dr. J's book he has a chapter called "SIRT1 the Rescue Gene". Very informative and there is a lot of info on the Web as well. You can do a Google search.
Basically calorie restriction activates SIRT1, this special gene in our bodies. When activated it begins to produce sirtuin enzymes which are described as a special protein that acts like a hormone. Every time you have a DD and restrict calories, these sirtuins are produced and begin to build up in your body. It takes several weeks worth of rotations to get them really built up to the point where they start making a difference in so many ways. They cause our bodies to burn and get rid of stored fat and prevent any extra calories we eat from being stored as fat. They cause appetite suppression and a feeling of satiation. They work to heal our bodies on a cellular level. Some people call SIRT1 the anti-aging gene. Anyway. good stuff!
