Looking for 1,800 calories today

Breakfast
1/2 apple........................................63
1 Thomas' English Muffin................120
2/3 T coconut oil.............................78
1/8 C cheddar, shredded..................57

Snack
Soyummi chocolate pudding cup.....115 *

416 so far

* If you can have soy, I do recommend the Soyummi brand, btw, when you need an exact calorie-count snack. Slightly more pudding (4.5 ounces) than other pudding in cups, but less calories. 4 times the fiber. 4 times the protein. 2/3 the sodium. I only find it at EarthFare, but they tell me they think other stores carry it. (At first I thought the name just meant "so yummy" - now realize I can't have this very often because I limit soy.)

I have not been hungry at all today, so I made a "power smoothie" for dinner.

THis is my go-to smoothie when I just need calories but don't feel like eating:

2 big handfuls of spinach
1 handful of frozen blueberries(about 1/2 a cup)
2T flax meal
1 scoop protein powder (vanilla whey)
1/2 an avocado
1-1.5 cups almond milk
1 drop ez-sweet (or whatever sweetener)

Spinach blends easily enough with an immersion blender, so I just blend it in the glass.
You can cube and freeze the avocado ahead of time to make it colder, too.

I will use kale, too, if I feel like getting the blender out. Kale takes more power to break down than spinach.

I was out of chocolate protein powder but I will use chocolate or vanilla protein powder in this with frozen strawberries instead of blueberries.
I may pick up some mangoes this week and freeze the cubes for another flavor option
