Hi all. I saw a recipe for zuchinni bites the other day and didn't write it down and now can't find it. Does anyone know what I'm talking about? I believe it had onion and some cheese and baked in a mini muffin tin. Thanks in advance!

I can't find the link either, but I copied the recipe.....I guess I didn't copy the poster either, so sorry for not doing so...
Squash - Zucchini, includes skin, raw, 1 cup, chopped
Onions - Raw, 1/4 cup, chopped
Parmesean Cheese Grated - 1/4 cup
Panko Bread Crumbs- 1/4 cup
Eggs - Whole, raw, 1 large
Put the onion and zucchini in the food processor so it's finely chopped. Mix everything together. Spoon by the teaspoonful into mini muffin tin (GREASED) Pat down with back of spoon. 400 degree oven for 20 minutes or until you notice them getting a beautiful brown crust on the edges. Makes 12 tots per tin.

Cauliflower Pizza Bites
(From Healthy DAMY )
2 cups grated cauliflower
1/4 cup egg whites
1 cup 1% Cottage Cheese
1 tsp oregano
2 tsp parsley
1/4 tsp garlic salt
pinch black pepper
pinch hot sauce
36 slices turkey pepperoni
Preheat oven to 450. Spray mini muffin trays with cooking spray.
In a hot frying pan, stir the grated cauliflower until it is slightly translucent - about 5 - 8 minutes. Transfer to a bowl and let cool.
Place remaining ingredients into a food processor and blend until smooth.
Pour blended ingredients into the bowl with the cauliflower and stir to combine well.
Evenly spoon mixture into prepared muffin tins. Press down firmly. Press a slice of turkey pepperoni onto each one. Use cookie sheet with parchment paper…free-form pizzetas. Only 8 cals, .5 carb

These are so good. I make them in a mini-muffin tin. I've learned that spraying the tin with pam is vastly superior to oiling the tin with olive oil. They pop right out with the pam and stick badly with the olive oil. Just FYI

Thanks everyone!!! Made them last night and they are great...used pam like suggested. Now my problem is keeping my slender husband from eating them all....
