It's Monday what are you eating?

UD

B: full fat greek yoghurt, with a homemade PB cookie and a couple of squares of 85% chocolate (was craving the chocolate yesterday on my DD!)
L: Homemade chesse and almond bread with cashew butter, salad
D: Chicken, cauliflower, broccoli, cabbage and little grated cheese

Totals = 1881 cals, 61g carbs

Have a good Monday everyone!

Oops, just seen this thread about different UD and DD "what are you eating threads"

Separate UD/DD daily "eating" threads?

Thought I'd pop in here and say "Hi" to all you enjoying your luscious UDs and mention the DD thread ( I see Kissa mentioned it already - thanks girl for those on DD today: It's ~~DD~~ MONDAY - what are you eating?

In case anyone missed it, here's the link to PJ's thread on separating the daily "what are you eating" thread into one for those on DD and one for those on UD:

Up Day for Me!

B: Amy's Tofu Scramble + Kashi Blueberry Waffles w/ SF Syrup & Butter
L: Grilled Ham & Cheese Sandwich on low carb bread + Strawberries
D: Italian Greens & Beans + Carba Nada Pasta, a little sauce & parmesan cheese
S: It might be coconut milk ice cream, depending on the calories I have left over

My prediction is that my carb count will be under 100, which is about half of what the average American eats, but will not impress any hard core low carbers :P

It interests me to see which healthful foods I am choosing because I _want_ them on an up day even though I could eat twinkles all day long. I'm not a big tofu eater but Amy's tofu scramble is very tasty and I wanted it. Carba Nada pasta is very pleasant, IMO, so why not use if it I've got it? And So Delicious' Sugar Free Coconut Milk ice cream is so great I want to buy stock in the company.

Up day so I am going to eat whatever I want! Seriously I am amazed at how the down days seem to curb my appetite. This morning I had a little piece of blackberry cobbler which I looked at all day yesterday in the fridge. Busy day so probably just some almonds for a snack, and then out to eat with DH! Love the up days!

It sounds good! Like beef and veggies in a puff pastry?
