DD or UD recipe. Its yummy

Cabbage soup

170g zucchini diced
155g onion diced
2 cloves crushed garlic
65g celery diced
125g leek sliced
500g cabbage shredded
15ml olive oil
1.5 litres low sodium chicken stock
2 tbs tomato paste
pinch chilli flakes
salt/ pepper to taste
extra water if needed

Cook the leek, garlic, onion and celery in the olive oil till soft.
Add cabbage, zucchini, chilli flakes, stock and tomato paste, salt/pepper and cook till soft.

I got 6 x 1.5 cup serves at -

80 calories per serve
4.5g protein
7.3g carbs
2.6g fats

I used CalorieKing.com.au for the nutritional data, except for the olive oil which was on the bottle, and the chicken stock which was on the carton.

I just had some for DD and its yummy. I still have 220 cals to go today.

Its soooo yummy and warming Sunday. We have winter here and its very cold. So this works for me.

I have always dreamed of visiting Melbourne! It is beautiful.
Wow! I have not been through many DD's in winter yet, as I just started in Feb and we had a mild winter. I can imagine that if I freeze in the summer, I will really be cold during winter. brrrr! I make Egg Drop Soup also for DD. It is easy and so amazing!

My fresh veggie soup is about like that too. I also add a bag of frozen broccoli florets, a bag of frozen cauliflower, often some Kale or my favorite- swiss chard.

This soup is so versatile! I freeze it in 2c containers and it reheats beautifully. I can add a dash of soy sauce/hot sauce/vinegar to make it Chinese Hot and Sour, or I can add a couple of tablespoons of marinara and some parmesan to make it Italian, or I can add some salsa to make it Mexican.

That's what I love about soup. So versatile.

Mitsa and Amlyjo - This cabbage soup and the variations look great. I will make these for sure!!!

I just made a HUGE soup this morning and posted it on the DD recipe thread - it's #800.

I got so hungry this morning, I put everything in it except the kitchen sink. I named it "I'll Never Be Hungry Again on a DD Soup." It's about 1 gallon and makes 2 servings of 192 calories.

But this cabbage soup will be good for variety. I really need the VOLUME these soups provide - and hot soup is such a comfort food. I was getting sick and tired of being hungry on DDs. If I want to save 300 calories for a dinner out, I could eat this all day to stave off hunger.

I'm hoping to head off some upcoming stalls by eating 200 calories on DDs.

Huge soup fan here to. Printing and going to find Heather's recipe. It's approaching 100 degrees and I can still eat soup!! LOVE IT!
