37 calorie zucchini pancakes - yum!
 
Inspired by Marianne's post about the zucchini tots and someone who mentioned you can cook them on the grill, this morning I made a variation of the recipe using what I had. Forgot to add the cheese but they were still yummy!!

This recipe makes four big pancakes for 37 calories each:

Preheat pancake griddle to 375 degrees. (mine is non-stick and requires NO cooking spray).

Mix:

1 cup grated zucchini, packed down in the cup.
1/4 cup minced dried onions (or you can use finely chopped fresh if you have 'em)
1/4 cup oat bran
1 whole egg
1 teaspoon fat free plain Greek yogurt

Spoon four servings on griddle and smash it down a little with the back of a spoon. Let it brown thoroughly on one side. Flip. Let it brown on the other side. Flip one more time to get the inside totally cooked.

You could be creative and add spices like garlic or a bit of salt and pepper or any kind of herbs to it.

Also, I had planned to add 1/4 cup mozzarella or parmesian or taco blend cheese to it, but I forgot! It would have tasted even better.

However, it was awesome, filling and tasted great! DH couldn't believe how yummy it smelled. then when he ate it he loved it! Only 37 calories each!

I don't usually eat breakfast but since I was making oatbran/yogurt pancakes for DH I decided to try this since the grill was hot.

Glad I did!

Gave me an idea for pancakes.
Just had flaxseed/zucchini pancakes for breakfast. Just used everything I had, added an entire giant overgrown grated zucchini and fried. DH had three and so did I and I am freezing the rest.
Some of my added ingredients were
flaxseed-ground
oat bran
oat fiber
gluc
coconut flour
baking powder
6 eggs
used about a T of all the flour type ingredients except the flaxseed. More like 1/4 cup of that.
No added liquid and they were perfect. Wonder if I can repeat the recipe since I didn't really keep up with what and how much I was adding?

Anyway thinks for the idea to create this morning. The garden is getting ready to give me an abundance of zucchini so I need zucchini recipes.

It makes me eager for my little zucchini blossoms to become fruits.

Now, in another month, when the zucchinis are as big as baseball bats and we have them coming out of our ears, I'll sing another tune!

Thank goodness I have a dehydrator. Looking forward to zucchini chips.

There is a great recipe that uses zucchini to make a faux baked apple or apple sauce that is SF and LC. I used to make it all the time whike LCing Might be a good low cal treat for DDs. I will dig it up and share in the next couple of days. Very easy.

These sound like the ones I made years ago, but mine weren't 37 calorie! I'll be trying these for sure! And ya know, omitting the onion and injecting some sweetener and cinnamon, I'll bet you could end up with a great little "apple" fritter for breakfast! :)
