UD here B: coffee. This is important. When I start with breakfast, I'm up to my calorie limit by about 2pm. It doesn't work for me to spread them out. L: bacon, eggs, and spinach. My favorite UD food D: prime rib and veggies. (No wonder I reach my limit!) Happy day everyone. |

B: coffee w/coconut oil and almond milk D: making a new recipe I saw: crockpot buffalo chicken, shredded, in low-carb pitas topped w/blue cheese dressing (recipe was in lettuce leaves, but pita today for the calories) S: shrimp, tomatoes, spinach, garlic and onions; steamed zucchini w/butter; maybe a salad The chicken recipe was simple: 1lb chicken breasts (boneless/skinless) 2 ribs celery; sliced thin 1 small onion; diced small chicken broth or water 1/2 cup (or so) tabasco or pepper sauce Put all this except the tabasco into a crockpot on low heat for 4-6 hours, until the chicken is tender. Pour off the liquid (save it for soup!) and shred the chicken and add the pepper sauce and cook another hour to heat through. Serve in lettuce cups (or low-carb pita) topped w/blue cheese dressing, ranch dressing, sour cream or whatever you like (shredded lettuce? yogurt/cucumber sauce sounds like it would be nice on this, too).

Okay - I'm back! I haven't really stopped - just had too many non-DD DD - if that makes sense. Yesterday was a good DD and today has been a pleasant UD!

Dottie, let me know how the crockpot buffalo chicken turns out? Sounds yummy and easy to make. Thinking of trying it sometime with lettuce wraps (and tons of blue cheese). ![]() DD here. I refused to get on the scale this morning. I know those two mojitos, half a sweet tamale cake appetizer, bread and butter, and five bites of cheesecake are not my friend. It was ok, but not great.
I did add some of the chicken broth back in because it was dry. I'm thinking half boneless, skinless thighs and half breasts, for not too many more calories, would make it better. Also maybe something like adding a couple of wedges of laughing cow cheese, or some fat free sour cream to the chicken would help. Overall it was a good idea, but was just bleh as written. On the other hand, the broth made a great soup yesterday! |

Thanks for the feedback, Dottie. I have issues with dry chicken breast too, so I'll probably make adjustments like you. I love that spicy tangy flavor of buffalo chicken though, so I want to work that in sometime!
