Summer's Here...need DD frosty treat ideas...STAT!

Hi all!

My "downfall" has always been ice cream in the summertime, and now I can have it once in a while...hmmm...actually--every other day if I really want!

What I want to know: Does anyone else crave sweets sometimes on DDs???

Usually my DDs are pretty protein rich to keep hunger under control, but I also would like to have some go-to items for my summertime sweet tooth. Not every DD mind you, but once in a while it would be nice to change things up a bit.

All you JUDDDers out there, please tell me your favorite summertime snacks that are DD friendly. Thanks a bunch!!

Every morning, I make one or more 2quart pitchers of sf iced tea, lemonade, berry-fruity drinks...I've been on a decaf green tea + hibiscus + berry pomegranate Mio kick for a while. Diet root beer is a favorite, too; I've noticed that if I'm hungry, carbonated drinks kill the hunger whereas other drinks don't.

Add a bit of milk or light cream (or vanilla coffee creamer) to cold diet soda; tastes quite like an ice cream float for about half a million calories less!!!

Oh, and iced coffee is also good.

I have an immersion blender and I can quickly make a slushie out of any of those drinks. All of the above + smoothies, protein drinks, etc can be frozen into popsicles, too.

There are lots of sf popsicles available...Philly Swirl is only 14 calories. Even the super-cheap ice pops you freeze yourself (they're sold in net bags) are only 25 calories each.

For breakfast this morning (DD) I took a cup of light Silk chocolate soymilk, 2 TBSP of PB2 and blended it all up with ice. Was a lovely bit peanut butter chocolate shake for 135 cals and kept me full for quite a while!

I'll make a latte with nf milk, 90 calories and vanilla syrup ( di Vinci ) and I blend it really really well with lots of ice and kind of make a coffee slushy. I use a straw and a spoon. It's very satisfying and you get a little caffeine.

I make ice pops with my favorite drinks- iced coffee with davinci syrups, crystal light... what ever you like. I make about 4 at a time and in 1 or 2 I put a tiny slash of cream. It really helps if I'm craving a little something extra on a DD.

Shaved ice with Davinci or Torani syrups. I have had my shaved ice maker for about 3 years or so and I love it!!! Just ice and no calorie syrup---deelish and hits the spot for those sweltering hot days. The maker I have turns your ice into shaved ice or slushie type drinks so you can make slushies with diet sodas if you wish!

I run into this problem, too...I can eat a whole box of popsicles without even thinking about it. So I made my own the other day with 2 packs of Koolaid (I used orange since it's my favorite), liquid Splenda, and a quart of water to make it stronger. I then just poured it into my molds and then filled the pitcher up to make the rest into Koolaid to drink. As liquid Splenda truely has no calories, I could eat all 4 HUGE popsicles without any guilt at all!

I have also been toying with the idea of making my own jello...has anyone done this? I have several flavors of Koolaid, gelatin, and Splenda, but I don't have any idea what proportions to use for any of it.

I'll be reading this with interest as I also love ice cream and haven't allowed myself to have any for fear of releasing the binge beast.

I used to do that: 4c water, 1 pkt Kool-Aid, 2 T gelatin, sweeten to taste. You can also add some DaVinci's syrup for extra flavor or mixed flavor--lemonade KoolAid + raspberry syrup, for example. Or I've used Crystal Light or 4C mixes, since they're already sweetened (drink mix=2qt/8c drink or 1qt/4c gelatin).

If the flavor or firmness is not right, you can always "un-gel" it by re-heating, then add ingredients until it's perfect for your taste!

You can also add a little gelatin or Jell-O to ice pops to make them less drippy. It also feels like you're *eating* something, not just sucking the flavor out of a chunk of ice. It's been a really long time since I made those...if you Google "jello ice pops", the basic recipe will pop up.

Skinny cow truffle ice cream bars are AMAZING. I think they are 100 cals but might be 110. I am also madly in love with the jello decadent lemon meringue pie desserts. 100 calories and really, really tastes like lemon meringue pie minus the crust. Keep them nice and cold in the fridge and you can't beat that!

A cup of chocolate almond milk, blended up with half a sleeve of Via (decaf or regular), stevia glycerite, vanilla, and on a really decadent day I'll add just 1 T. of cottage cheese. Add ice and blend in the VitaMix to get it nice and smooth. Great for a hot day!

I just saw several different kinds of molds at Target in their "seasonal" section (by the patio furniture in my store). They had some really cute ones.

I see them all the time at the grocery store & WalMart--sometimes in the "summery" section, sometimes in the juice aisle, sometimes in weird random places. I'm sure if you ask an employee, they could point you in the right direction.

One particularly hot summer I just made ginormous "ice pops" with snack-size ziploc bags! I think I put in about 1/2 cup of liquid. I don't have a lot of spare flat space in my freezer for popsicle molds...I just put the bags in a rectangular plastic container in case of leaks.

For chocolatey things--use chocolate almond milk, sf/ff pudding, yogurt, protein shakes...make popsicles, or freeze in ice cube trays & blend w/liquid to make a slushie. A DaVinci-type syrup could help keep the calories down a bit, compared to cocoa powder.

Thanks Dawn and Jenny, great idea about the ziploc bags as I don't have much room in my freezer either!

Will also check out your chocolatey ideas too, I guess you can freeze just about anything. A little experimentation is in my future I see....

Bumping this thread just one more time for other ideas. So many good ways to feel like we are having something decadent even on DDs-- and I love that, especially in the summer heat!

Oh, and I like to freeze leftover coffee in ice cube trays.
Thrifty...and that way an iced coffee doesn't get watered down by regular ice cubes.

Or pop some of those into a low-cal chocolate almond milk...blend...Mocha Slushie!!!

I cook up a batch of my clean chocolate syrup (recipe is in down day recipe sticky) and make a chocolate frappe in the magic bullet with ice, greek yogurt and the chocolate syrup, (pb2 is optional for pb goodness) and a drizzle of extra syrup over the top. Creamy, satisfactory, and lots of it! In fact I just decided last night I will need a fresh batch of chocolate syrup. It lasts a few weeks in the fridge and I had to throw out some of the last jar.

Down Days recipes ONLY

Remember anything you are going to make icy or freeze will have to be about twice as sweet as you think it should be because cold kills the sweet taste.
The only fruity frozen stuff I like is citrus - lemon or lime slushies are easy. Adding booze to them is a big weight no-no for me, but I love a gin and lime slush.

Blue Diamond makes an unsweetened chocolate almond milk, 45 cal/cup
--the line is called Almond Breeze, there are about 6 diff kinds (sweet/unsweet)
plus now they have an almond/coconut milk.

They're in the refrigerated section but they also come in aseptic packages.

You may have to/be able to request the unsweetened version.
Health food stores/co-ops are usually glad to order such items for you if your local grocery store isn't. Plus if you really like it, they usually offer 10-20% off on cases!

They have them at Whole Foods, Trader Joe's, places like that pretty readily. I've found them in my supermarket where they keep the refrigerated milk, as well as where they keep the powdered milk.

My "better than ice cream" trick: Frozen mango. Put a cup of frozen mango chunks in a bowl, nuke it for about 30 seconds. It's still frozen but not hard. Creamy texture, sweet, yummy. And for about 100 calories, you can eat it even on a down day.
