I haven't used it much myself, but basically it's a fiber that works as a thickener.
In my experience, it has a texture more like gelatin than "slimy" fibers like guar or xanthan gums.
I've seen people mention that they use it to make puddings (with chocolate almond milk, for example) or add it to 0-calorie drinks like Crystal Light, or to thicken protein shakes, soups, sauces, etc.

Some people also make their own shirataki noodles/dumplings with it.

Here's a big thread...not all DD-friendly, but maybe will give you some ideas.

I am really enjoying it in smoothies. About 1/2 a tsp makes 2 generous, thick smoothies. It sure stops hunger in it's tracks for me, for a few hours for sure!

I use a tiny bit in sauces (especially asian sauces that would normally be cornstarchy like spicy orange chicken)
it goes in my clean down day cocoa mix and chocolate syrup and marshmallow creme
I don't care for it in large quantities (gets slimy feeling to me) but works great in small amounts in lots of things especially since it works well cold or hot, doesn't need cooking to incorporate. I keep a small spice bottle sized shaker of it to add a dash or two when needed.

It can also suck the flavor out of stuff if you use too much. I made an egg cream shake one morning to take to work and by the time I went to drink it ... I've learned to add much less to the egg creams especially if I'm not going to drink it asap.
