Paleo Banana Bread Recipe for Mitsa

I'm not sure if this is the one you are looking for, but I FINALLY found it in an old Weight management thread (back from Jan 2012, whew!). I don't use it anymore since I can't have eggs, so couldn't just pull it from my recipe binder.

Paleo Banana Bread:
3 eggs separated
4 tbsp honey
4 tbsp olive oil
2 mashed bananas
1tsp vanilla
1 tsp baking powder
1 tsp ground cinnamon
2 cups almond flour

Oven 350*
Cream egg yolks and honey in large bowl until light and fluffy.
Add, remaining ingredients (except egg whites) and combine well.
In separate bowl, beat egg whites until stiff peaks form
Fold egg whites into batter 1/3 at a time

You can make this as bread by greasing a loaf pan with coconut or olive oil and baking for 40-45 minutes.

Or make muffins (what I did), and bake 15-18 minutes (I got 18 muffins).

I calculated the nutrient info based on adding up all the ingredients and came up with (per muffin): Cal 140, Net Carbs 8, Protein 4, Fat 10.

I'm wondering if you could use coconut flour? I have a bag of it I bought a while ago, that sounded fabulous, but I have no idea what to do with it!

Hi thanks for that. I think this may be the one. It did have honey in it. I think your daughter had made them for you?

You could probably use some coconut flour, but I wouldn't sub for all of the almond flour with it. In the baking I've done, I've found coconut flour works best in combo with other flours (and I use no grains--just almond, tapioca, arrowroot, flaxseed meal and the like). And if I sub in coc. flour, I use half of whatever flour I'm subbing for. Too much coconut flour seems to make it gummier and harder to get done in the center.

Yes, my dd has made these for me, and I think it's the only banana recipe I've shared on here as well.

I also don't use honey anymore (too hard on my blood sugar). I use a combo of coconut sugar and vanilla stevia in my baking now.
