I posted a banana muffin recipe on the main recipe forums recently, but I don't think it could be my recipe that's under discussion, because mine doesn't have honey in it and the other thread poster mentioned honey specifically. Mine isn't particularly low-cal either.

If you want a low cal muffin recipe, I've searched online for coconut flour recipes (my flour of choice). It usually requires lots of eggs because coconut flour tends to absorb a ton of liquid, unlike other flours, so I usually use 1 whole egg + 6 Tbs egg whites to sub for every 3 whole eggs in the recipe. I also sub applesauce in place of butter. I recently did both these substitutions for a coconut flour banana muffin recipe... also for some blueberry muffins. And if the recipe is not already sugar free, I also sub sweet n low for any sugar... the equivalents are on the box...

Side note, I simply add extra sweet to make more of a cupcake, and I recently discovered that peanut butter frosting and bacon bits on top of a banana cupcake is awesome! Elvis style!
