YUM! Low Cal/Low Carb Rice Pudding! Great on DDs!

I was messing around the kitchen on my DD today, and I created rice pudding! And it's only 10 calories! (Or maybe a few more... how do you count I Can't Believe It's Not Butter spray when it's more like 20-some sprays than just 5?)

Anyway, I started with...

2 oz. of almond milk
2 packets of sweet n low
1/4 tsp glucommanan powder
vanilla extract to taste

I put it in a small bowl and used the hand mixer with one beater. I was amazed to see the almond milk actually fluff up a bit! I did add the gluc powder gradually, not 1/4 all at once. It thickened nicely. I like it warm, so I warmed it in the microwave for about 15 sec.

Then I stirred in...

a few spoonfuls of miracle rice (gradually added)
cinnamon to taste
I Can't Believe It's Not Butter to taste
small pinch salt

It was so good! And I can't believe how something that is basically 1/4 c almond milk and a few spoons of miracle rice is so filling! It's the power of the gluc, I guess!

I just had to share in case anyone needs some DD help!

Wow, I was just searching for a single serving miracle rice pudding recipe! For some reason, I have been craving it. I am in P3 right now but will certainly use this on my next round in P2 also!

It has acini de pepi, fruits, whipped cream, and I'm not sure what else. So basically a fruit salad type of thing. It goes by different names.

Sounds a lot like "Heavenly Hash"... cooked rice, whipped cream, a tad of sour cream, pineapple, a few maraschino cherries, coconut, maybe some chopped pecans.
