I have 8 dozen eggs in my frig. DH and I can't keep up with the hens on weekends. Yikes. Need to dig out a pound cake recipe.

I've a very good pound cake recipe to share if you like...my hens are working steady this spring too! Somewhere I have an angel food cake recpe that requires a dozen eggs....

UD for me today -
B: coffee - maybe homemade waffles
L. shrimp, cocktail sauce (HM/low cal)
D: Pork Roast, brussel sprouts & ?

supposed to be eating 2300 but not quite getting there - the magic of JUDDD may be starting!

Roast lamb and roast potatoes with broccoli. Two glasses of red.

Frothy coffee with chocolate sprinkles.

Tea will be Spanish omelette.

Yum. UDs and carbs are so good after my super tight low carb week! On the other hand my super tight skinny jeans are now too big.

Catherine - I would love your pound cake recipe so I can use up some of these eggs. Since those can be frozen, they are great to cook in advance. I haven't found one in my recipe books yet that use that many eggs.

Our pound cake only uses 4 - but its delicious
The angel food uses 12....

HUNGRY TODAY even though I had a good UD with lots of good food...

B-coffee, ffhnh Splenda, Stew Leonard's rice cake (the only kind I think tastes good), LC french onion

L-egg sub, celery

D-tilapia baked then broiled with parm and lite mayo spread on, probably cukes

S- ACV, the kind with the mother, with water and Splenda (he** of a snack.. ), maybe coffee

Cals will be almost 400, but I am ok with that.

ok, as scheduled, big changes !

lunch was veggie burger (white bean + corn + oats) with celeriac purée + some cheese I bought at the market
diner was roasted veggies & tofu wrap

add 2 glasses of wine and i'm totally stuffed !

Dinner - birthday celebration with the kids at a restaurant TBD - will try and stay at about 1100 cals for dinner for a daily grand total of 1850

Had dark chocolate dipped in natural chunky peanut butter earlier, plus some white wine.

Now finishing up dinner:
-canned green beans
-fresh cooked beets
-salad greens, broccoli slaw and coleslaw mix with evoo + lemon
-skillet steak dish with red pepper, onion, garlic, portabella mushrooms & seasoning, and rice
-red wine

There may be more chocolate and peanut butter tonight.
