Chocolate CO Bark Recipes

As many of you know, I'm trying to reduce/eliminate my soy consumption. Imagine my horror when I started reading labels on my beloved chili chocolate and sea salt dark chocolate bars and found . . . SOY!

Who has super easy, delicious CO bark recipes? I would love to try them. I know there was a sea salt version not too long ago, and I'll see if I can find that one, but any others would be greatly appreciated. Chocolate is usually how I manage to hit my UD numbers if I'm low, so it's not merely a desire; it's a NECESSITY!

Mocha and sea salt coconut candy

1/4 cup coconut oil, melted but not hot
3T good quality cocoa powder
1tsp instant coffee powder
Sweetener of choice equal to 2T (or more if you like it sweeter)
Freshly ground sea salt or coarse ground sea salt

Dissolve the coffee into the coconut oil. Add the sweetener and stir that as well.
Add a pinch of the salt and the cocoa powder and stir or whisk until completely dissolved and smooth. Taste it at this point to make sure it's as sweet as you like.

Pour onto a plate or whatever that is lined with parchment paper.
Refrigerate until it just starts to set, then sprinkle the sea salt over the top and very gently press to make it stick**, then refrigerate until it's hardened.
Break into pieces and enjoy!

**At this point you can score the candy into pieces if you like a more uniform size.

Dawn you can add some cayenne to that, also I do add like 1/4tsp vanilla extract when I add a hot element. Is seems to compliment the heat.

Start Date: Aug 2011/I've been maintaining since April 2012
One of our favorites is:

1Tbsp coconut oil
1 Tbsp almond butter

Heat these to melt and stir.
Add:
1 1/2 tsp cocoa powder
liquid stevia to taste (5-6 drops for us) I've tried using the powdered stevia, but it doesn't dissolve.

It's like fudge. YUM.

So I just read through this thread, and the recipes sound delicious, and everyone is so well-meaning in offering them. But now I am cravng sweets for the first time in weeks, having had zero since March 21. I have a feeling that if I start to eat these things, my whole eating plan will become much more difficult. Personally, I'm better off with cold-turkey when it comes to sweet things. Of course,that's just me.

I forgot to mention that I put the 'fudge' in the fridge to harden. Then warm water over the bottom of the bowl for a few seconds just until it releases. Then break into pieces.

Stella, you know yourself best. Sugar or artificial sweeteners make me crave more, more more. But stevia does not seem to have the same effect.

But for sure if any food increases your cravings, you should avoid it.

Stellar I don't make mine very sweet. It's more the smoky depth of cocoa flavor that I like, not too sweet (nothing like a candy bar).

Good thread! I haven't made chocolate coconut bark since my vlc days since I just eat small squares of dark chocolate when the urge hits, but there are times when I really do want less carbs and sugar and these hit the spot.

I like adding peppermint and vanilla extract and a bit of hwc to various chocolate coconut bark w/stevia recipes to make mint chocolate bark. I don't like the standard white peppermint bark so I still use the dark cocoa.

Stellar Trader Joes has wonderful chocolate bars that are sugar free and one net carb per serving. Dark or milk whichever you prefer. Perhaps you might be able to have some of those without them triggering cravings.

I like to add unsweetened coconut flakes and chopped almonds. Almond butter is good too but makes it too addictive to me.

My sisters will sweeten it with Algarve Nectar and add raisins or craisins and sometimes even chopped ginger. Then it becomes more of a fudge.

the TJ's chocolate bars have sugar alcohols and that does not agree with me--but World Market has these store brand 99% cacao bars that are 50 calories and 1 carb per square--and are oddly sweet enough and so satisfyingly delicious. Highly recommend.

Have to say though, on Dawn's second post I thought it said MUCUS and sea salt coconut candy. Nope. No way. Not even if it made me lose 5 pounds a week. Well. That's not true.........I'd consider it if I lost 5 pounds a week...........

I'm finding issues with Erythritol lately (which is weird, b/c that is one most people don't have issues with)..sigh.

So I noticed that I have 85% bar (Green & Black's Organic, I've seen it at various stores) and it's about 11g net for 12 squares, which is just about 1/2 the bar. It's SO intense, but just the right sweetness (I've tried the Lindt 90 or 99% and it was like tasting unsweet baking chocolate, to me).

Anyway-- just another option. I really try to find decent unsweet chocolate to use in baking and recipes-- I sometimes find Callebraut at Whole Foods... sometimes I resort to Bakers

I gotta say-- LOVE that on on JUDDD, an acceptable way to get your last few calories on an UD is to have chocolate and peanut butter!

I make this all the time but in small plastic tupperware containers. Well I had a party yesterday so I made a big batch and it stuck to the container like crazy! I did a few things different from normal, I'm wondering if anyone can tell me which thing I did that made it stick?
I put it in a class pyrex, I added almonds (whole and crushed), I used a mix of unrefined and refined coconut oil instead of just unrefined. It was a horrible mess and I wasn't able to break out squares at all. So disappointed.

Oh, man, this one should be a sticky! We eat this stuff daily. For variey we also do Lindt 90% (which is an acquired taste for sure, Soren - tastes like a coal mine initially), but I LOVE being able to play with the levels of coffee, salt, and cayenne. DELICIOUS.

Did you line the pyrex? I always use parchment. It pulls right out and the bark comes off it very easily.

Might be, but I'm admittedly not the most knowledgeable in the kitchen. Next time try it with parchment and see if that helps.

I use "Real Salt sea salt" and have also used "Celtic Sea Salt". I also add 1/4 tsp of sea salt to my first lemon water each morning. Sea salt is very good for you.

And I agree about the mix of sea salt & chocolate!!! Is is heavenly!
