The Frugal Cow "cheese" "wedges" or sauce

I *tried* to make these vegetarian, with xanthan gum, but the texture was.....stretchy!

BASIC RECIPE

1/2 cup whole milk (75 cal)
1tbsp unflavored gelatin (35 cal)
6 oz fat-free Greek yogurt (sm container or 3/4 cup) (100 cal)
4 oz light cream cheese (240 cal)

Pour cold milk into pan or double boiler. Sprinkle gelatin on top & allow to soften for approx 5 minutes. Over medium-low heat, gently warm milk while stirring with whisk until gelatin is dissolved. Add yogurt & stir until smooth. Add cream cheese and stir until smooth. Remove from heat.

Add seasonings as desired, pour into mold(s), and chill.

Total calories: 550
Yield: 28 tablespoons/14-15 oz (by weight)
Calories per tbsp: 20

LCow wedges are .75 oz & WW are .67 oz.
Approx 1.5 tbsp is equivalent to a wedge, so this should yield about 20 servings...2.5 pkgs of wedges...for under $3!

PS: Place container/mold of your choice on scale, zero out, and pour in 6 oz. Chill and cut into 8 pieces for LCow size, or 4 oz into 6 pcs for WW size.

SMOKY CHEDDAR

1 oz powdered cheese (135 cal; may vary)
1/2-1 tsp Worcestershire sauce
1/2-1 tsp smoked paprika

Great for "mac 'n' cheese"!

Approx. 25 cal per tbsp.

Piratejenny, I'm loving the name "The Frugal Cow"! This sounds really good to make even to use as a single batch in a large recipe of something if I don't want to cut it up and save to use in little wedges for later. I may add this to a large cheesy casserole recipe to lower total calories.
