It's a One Minute Muffin - of which there are 3 million different versions.

My most recent favorite, besides Quizoid's version is this:

1/3 c. Carbquick
1/3 c. SF DaVinci (blueberry for this one)
2 T blueberries

Mix it up in a cup, nuke it for 2-3 minutes and eat up.

I use bigger quantities on an UD. Plus I swap out the blueberries for SF chocolate chips and use Cookie Dough syrup.

I have a OMM each Up day! Here is mine:

1 pat of butter
3 T golden flax meal
1 egg
1 t baking powder
shake or 2 of salt
sweetner to taste

Nuke the butter in a smallish bowl (the size/shape you want your muffin), then combine in the rest of the ingredients, stir till mixed. Then I nuke mine for 1 minute 11 seconds. Let it sit a few minutes, then knife the sides and pop out. It is really good. I have Celiac, so this is my "bread". It is about 200 calories, so if you can eat bread, probably better to just do that.

Here's one I like from Jorge Cruise:

Ingredients
Makes one serving

1/4 cup ground flax seed
1 tsp baking powder
2 tsp cinnamon
1 tsp coconut oil
1 egg
1 packet stevia (or splenda or whatever)

Directions
Mix all ingredients together in a mug and microwave for 50 seconds. Allow to cool to a safe temperature and enjoy. Each muffin contains 263.2 Calories, Total Carbohydrate 19.6 g, Total Fat 25.5 g, (Saturated Fat 6.9 g, Polyunsaturated Fat 11.8 g, Monounsaturated Fat5.6 g, 12.4 g protein). You can find the total breakdown on ***********.com.

Calories per serving of Jorge’s Skinny Muffins (from the Dr. Oz show)

140 calories of Golden Flax, cold milled Golden Flax Seed (Flax*USA), (4 tbsp)
70 calories of Egg, fresh, (1 large)
39 calories of Coconut Oil, (1 1tsp)
12 calories of Cinnamon, ground, (2 tsp)
2 calories of Baking Powder, (1 tsp)
0 calories of *Truvia (Zero Cal Stevia) 1 packet, (1 serving)

Anybody ever see a recipe for these without the egg? I tried one using EnerG egg replacer and it was a disaster--could have used it for a rubber bouncy ball. LOL

I loved having them on UD's, but with my egg allergy, it's a no go.

Use the one I posted above!

While I'm thinking about, these can be almost pudding-like if you don't cook them long enough. But, that's what makes them yummy! Cook them longer for a true muffin texture.

Thanks for trying. I saw that the carb quick had eggs.

Pudding would be fine, this was like dried out rubber cement. LOL I haven't tried it with chia gel and applesauce. I'll play around with it. Nice thing about it is, if it doesn't work, you aren't out a ton of ingredients.

for a low cal muffin (with egg)

1/4 c egg beaters
2T coconut flour
1/8th tsp baking soda
1/4tsp baking powder
pinch salt
vanilla or favorite extract
sweetener of choice to equal 1/8-1/4 cup depending of desired sweetness

less than 100 cals, if i remember correctly

chocolate version

everything the same except:
2T cocoa powder
1T coconut flour

ingredients: Potato Starch, tapioca starch flour, leavening (calcium lactate [not derived from dairy], calcium carbonate, citric acid), sodium carboxymethylcellulose, methylcellulose

That's what I tried to use and it just didn't work. Made it really rubbery. No idea why it wouldn't have worked, I use it in other baked items. But for this, it was fail.

Here is a take off of Shelly's OMM made with peanut flour and by far my favorite to date!

DD OMM

Ingredients:

2 TBS peanut flour
1 TBS Oat fiber
1 Tsp baking powder
1 Tsp Gluc powder
2 TBS or more to taste SF sweetener of choice (I used DaVinci's Praline)
2 TBS granulated sweetener of choice
1 TBS Nonfat Greek Yogurt (have even used FF sour cream here)
1/4 Tsp vanilla extract
2 TBS egg beaters

Directions:

Spray a large mug or same sized container with cooking spray.
Mix all ingredients well in bowl and then put in sprayed container.
Microwave on high for 2 to 3 minutes (my micro is 700 watts so if yours in more use less time)
Let cool and ENJOY!

Serving Size 1 Serving

Amount Per Serving
Calories from Fat 14
Calories 50

I don't specifically have a recipe (no microwave), but I have a couple suggestions:

--use a recipe with flax seed, but soak the flax in a couple tbsps of water for a few minutes beforehand. It will develop an "eggy" consistency.
--add a little xanthan gum; maybe about 1/16 or 1/8tsp. It binds particles together and helps baked goods rise.
--this will take a little more time, but instead of nuking, use the batter to make a waffle! Make several at once, and freeze some if desired. Some of the LC or gluten-free recipes that have an overly crumbly or dense texture for pancakes, bread or muffins are GREAT as waffles!

I'm confused how this muffin comes in at only 50 cals. I love the sound of it but thought each tbs of peanut flour was 28 cals alone, then you have about 20 cals of eggbeaters and a little more for the yogurt.
