new designer "flour"

A Fantastic Flour Mix
I've been experimenting with using powdered eggwhites in my flour mixes instead of adding eggs later. I love it! the goods I "bake" in the microwave puff up so high and the grain of the flour is so lovely. The recipe that follows makes an absolutely enormous "one minute muffin" I love the texture and I love how easily I can change the flavours. So far today, I made a pumpkin one and a blueberry one. Delicious!

Basic flour mixture

2 Tbs Oatfiber
2 Tbs coconut flour (60)
1 Tbs vanilla protein powder (30)
1 Tbs eggwhite powder (22)
1/2 tsp baking powder
1/2 tsp glucomannan powder
1 Tbs erythritol (optional)
spices (optional--but is great with pumpkin pie spice or cinnamon)

To this I add a mixture of davinci SF syrup and water or almond milk. My mixture is about 1/2 cup to start, but because of the coconut flour, more liquid may be necessary. Experiment with it.

The one I made for lunch had 2 TBS pumpkin added. The one this afternoon had 1/2 cup blueberries.

I made a topping from 2 TBS ff cream cheese mixed with a little vanilla davinci's

Let me know if you try this. I just loved the texture and how filling it is for so little in the way of calories.

they are char. It is a remarkable "flour" for the calories--the two coffee cakes I made today from it are really good. I am looking forward to seeing the tweaks my friends might come up with! the eggwhite powder really does something interesting in combination with the gluc and coconut etc.

Does this make 2 muffins, Ouiz? Or did you make 2 muffins using the recipe twice?

This sounds amazing and I can't wait to go get some powdered egg whites. I was just looking at it in the store and wondering what I could do with it! You idea is brilliant!!

THIS is exciting!

I think I even have gluc in the house, not knowing what to do with it. WOO!

Do you just add the liquid and nuke for one minute? or do you do something else to make it into a OMM?

This is sounding really good, and since I'm a big fan of your OMM recipes, I will certainly be trying this when I get some powdered egg whites.

if you can't find them, check a craft store for meringue powder (watch for sugar content), I've used that instead (waiting for my online order to come in).

I bought some in the wedding section at our little Wal-Mart. Mine (I think) is meringue powder with just egg whites so should work.

Cant wait to try this. So many of the other mixes that use cheeses etc are so high in calories. I am excited to try this. I got powdered egg whites in the cake decorating section so now I just need the fiber! Thanks

After bowling, I went into our Publix and did find Deb El brand of the dried egg whites. 2 tsps=10 calories.

I am so anxious to try these as I'm absolutely in love with OMMs!!
They are my go-to food on DDs.

honestly, Netrition is probably the best place to find all of them. For non-online, check your local health food store, health food aisle of local grocery (if it's a good one), and for the egg white powder, often craft stores have it in cake decorating as "meringue powder" but check the ingredients, might have extra sugar or weird stuff.

Caramel raisin apple version. Basic flour mixture, one packet sf apple cider(15), 1 little packet of raisins (45), 1/2 apple diced (30), caramel davinci syrup. put in a big bowl and microwaved 4 minutes. less than 200 cals for the whole bowl. so so good.

I'm guessing this is big enough to be a whole meal? The muffin meal... Why not?

Ok, so, once again, b/c apparently I'm a little dense on my DDs

you mix the above, you add some liquid to make it thick-ish, and you nuke for a couple of minutes in a bowl.

Then you eat and enjoy, for 112cal?

Lol! Yep, that. Exactly--plus extra calories for add-ins (e.g., 35 cals for 1/2 Cup blueberries or 50 cals for 2tbs PB2) etc. so so good!

I'm done with food for today, but I've got calories to spare tomorrow, so I'll give this a try before I go to the office. I have the dry mix all set, ready for liquid.

I know it depends on the coconut flour etc, but what's the rough amount of liquid you added to start with?

Probably about a half cup of davincis mixed with almond milk and then stirred. Just kept adding more milk til it seemed like cake batter.

Ok, you did say that in the first post but I wasn't sure if you meant add 1/2c liquid, or the whole thing made 1/2c once liquid was added

got it now. Will try tomorrow and report back-- I'm thinking some cocoa powder and chocolate davinci...
