I'm quite proud of myself
I just baked the Carrot Protein Bar recipe (with the baby food carrots) to have something sweet on hand this week. I omitted the 4 oz. water as my carrots were quite watery on their own and the batter was REAL watery. They baked up beautifully and are a bit dense/chewy. I love the texture and flavor!

But what I'm so proud of is after cutting them up, I let DH taste one (he liked them) and only had 1 bite myself!! :up: And on a DOWN DAY, right before lunch!! And it wasn't for lack of being hungry, as it's 11:00 and actually, I AM quite hungry at the moment.

Can't believe I didn't eat a whole one. I must want to lose this remaining 19# REEEEEEALY bad, huh? :lol:

They're quite goo, TG! I suspect they'd be great with the thinnest smear of lemon or lime cream cheese frosting, on an UP day, of course. ;)

I wouldn't have done that a month ago. I'd have eaten a whole one, even though they are low-calorie. I even got them out again after lunch for taking a pic, as I might post my tweaked version on my site. No bites were taken. I added ingredients to mine and they are more like dense gingerbread to me and my husband, rather than a protein bar. Don't know how they cook up right by the original recipe. I added oat fiber, erythritol and flax and omitted the almond milk/water they called for. Going to add snipped raisins to the next batch.
