The casserole was a spur of the moment thing where I just tossed in some stuff that sounded good. It's basically 2 pounds of ground beef, 1 brick of cream cheese, 1 16 oz container of sour cream, tons of chili spices, a bit of tomato paste, jalapenos, sauteed red onions and spinach (the spinach really gives it a nice texture), toss together in a pan and bake. It was good but next time I'd probably add mushrooms and peppers or some other veggies like squash or something.

I need to make something like that on my next UD. I was scared at first to have that kind of stuff around. But I've got a pretty good handle on both my UD's and DD's. I may try to make it a little lower cal so I can enjoy a smaller portion on a DD! Thanks for the ideas! I believe you are my food buddy! We eat a lot of the same things!

I had a 6-layer casserole also, but I'm pretty sure mine isn't the same recipe as yours

I know what you mean. I still sometimes want to eat my UD food on my DDs, and some days I do squeeze it in, just a smaller portion. I think if I substituted reduced fat or fat free on the dairy it would be do-able, but it's hard because I like my full fat foods. I spend a lot of time trying to figure out how to squeeze in as much full fat tastyness into both my UDs and DDs.

Dinner's still in the oven, but I'm sipping on the most delicious hot cocoa. My recipe isn't DD friendly, although the diet Swiss Miss by itself is of course, at 25 calories.

Heat 6 oz. water in microwave. In another cup, mix diet Swiss Miss, 1/4 c. mini-marshmallows (or as much as you like ), and pour the hot water in, stirring well. Add 1 T. heavy whipping cream, stir. Optional: Add bourbon, stir. Enjoy!

UP day, but I'm coming down with the flu or a cold and may not finish all my calories.

B - peanut butter toast, coffee with almond milk & pumpkin spice syrup

L - cream of broccoli soup, veggie burger with all the fixins & a pickle

I'm not really hungry for food right now, but I may fix a cup of hot chocolate with almond milk & coconut milk (the full fat kind that comes in a can).

I got a bit of a headache soon after the bourbon/cocoa, so it was probably the alcohol on a mostly empty stomach. Headache persisted through dinner though, but is almost gone now.

Just had a red grapefruit.
