Getting the most from your veggies

I've been reading this JUDDD board since October (and mostly J'ing most of that time) and I don't think I've seen this discussed....it also has not occured to me in all this time to bring it up...

But remember a couple years ago some study or news came out that if you eat your salad with fat-free dressing & no other fat, you don't get the optimal benefit from the fat-soluble vitamins (A, D, E)?

I don't think you even need *much* fat, maybe a teaspoon or less (I'll try to look it up, unless someone wants to try to beat me to it ). I know a lot of us focus on fat-free foods on DDs, but having a bite of cheese or sprinkling a spoonful of sunflower seeds on your salad could be worth a few calories!

Or, if you take fish or flax oil supplements, have them with your salads instead of other meals that have more fat (or less veggies!).

Maybe not anything to worry about, since everyone seems quite happy and vibrant, but just wanted to share the thought!

I think that's true. A few sprinkles of cheese, sunflower seeds and black olives complete a salad IMO, and don't add that many calories.

WOE: JUDDD/PHD, LC now that my BG is getting weird
Start Date: JUDDD 1/1/12 + LCHF 12/1/13 (controlling diabetes)
I use full fat salad dressing. On DDs I just use a whole lot less (the teaspoon measures just as accurately as the tablespoon).
